Simple Salsa

  • 3 chopped tomatoes (skin on with all the gunk removed)
  • 1/4 of a white onion, chopped
  • 1/4 of a green pepper, chopped
  • 1 jalapeno pepper, minced
  • 3 tbsp fresh cilantro
  • juice of 1/2 a lime
  • Mix all ingredients together in a bowl, and let chill in the fridge for a couple hours in the fridge to let the flavours settle. SO much better than the jarred gunk!!

    1. This is the exact salsa recipe I use. Sometimes I like to add in garlic and some frozen corn kernels. The corn adds just a little bit of sweetness and it is so yummy.

      I also use pretty much the same recipe for bruschetta but replace cilantro, lime and jalapeno with lots of dried basil and oregano. Mmmm.
