Roasted Red Pepper and Garlic Hummus


  • 1 can drained chickpeas
  • 1 roasted red pepper
  • 2 cloves roasted garlic
  • 2 tbsp plain yogurt
  • 2 tbsp fresh lemon juice
  • pinch chili powder
  • pepper


To roast the pepper, put it under the broiler, turning over every few minutes when the skin starts to turn black. The garlic will roast faster, so put that in towards the end. When done roasting, peel off the skin and throw in a food processor with the rest of the ingredients and blend. The pepper makes it really creamy, so leave out the yogurt or use homecooked chick peas if you like a thicker hummus :)
