Diet Coke Cupcakes
These are definitely not a “healthy” alternative to cupcakes. But they are reduced in calories and super easy to make. Two ingredients!
- 1 can or 355 mL Diet Coke (or Pepsi, if you swing that way)
- 1 box chocolate cake mix
Mix the two together slowly so the pop doesn’t fizz up. Then bake according to the instructions on the box.
- 1/2 cup smooth peanut butter
- 3/4 cup unsweetened vanilla almond milk
- 1 tsp vanilla
- 1 tbsp sweetener of choice
Whisk everything together in a bowl. I recommend adding the almond milk as you go until you reach your desired consistency. Put in the fridge and wait for cupcakes to cool before topping. Sprinkle on some crushed chocolate to finish!
**These cupcakes are really moist, much like when you bake with pumpkin. After a day or so, I would store them in the fridge, in a non airtight container.
