Dairy-Free (ish) Protein Pancakes
- 1/4 cup unflavoured soy protein powder (30g)
- 2 tbsp whole wheat flour
- 2 tbsp ground flax seed
- 1 tsp Benefibre (optional)
- 1 tsp baking powder
- lots of shakes of cinnamon
- 2 packets stevia (optional)
- 1 tsp vanilla extract
- 1/2 cup egg whites (not dairy IMO!)
- 1/2 cup unsweetened vanilla almond breeze (I would start with 1/4 cup and add until desired consistency)
Whisk together, and pour on a medium-heat greased frying pan. Add any extra fixings your heart desires. I like sprinkling flaked coconut and walnut pieces on top :)

It is imperative that one dips their pancakes and does not drizzle. It is my one rule for eating these ;)

mmmmmmmmmmmm i just stuff myself silly with these! the recipe makes SO much and they are so yummy. my batter was a little thin, i think next time i will do less liquid. i think it is because of the different altitudes? anyway, thanks for a winner of a recipe, susan!
My soy protein powder makes really thick batters as well, that probably had something to do with it too! Happy you liked it :)

Made these pancakes for breakfast today, after a cold wet run. They were great. You sure get a lot for the calories – the nutrient stats are great overall. Filled me up nicely! Will make them again. Thanks for the recipe.

OMG, I had a disaster with my cottage cheese pancakes (they normally work) this morning, and I was scared of fucking up again, so I found your recipe and tried it. I thought when making it the batter was a bit thin, but omg they turned out amazing, so flully and perfectly cake like in texture. Unfortunately I have not tried them yet, I will tomorrow and tell you probably how much i love them even more.
But wow thank you for giving me a use for my disgusting tasting soy protein.
How many eggs would it take for 1/2 cup egg whites? I really wanna try it!
One egg white is typically 2 tbsp… soooo four! :)

Hey Maryann! The recipe is one whole serving, and that’s what is shown in the pictures. Makes 4 small-medium pancakes, and I eat them aaaallll ;)

Hi Jen! It’s *best* with soy, as I find it takes on the same texture as flour when cooked. That way you can’t even tell there’s protein powder in there. Whey gets a little hard and “squeaky” when cooked. So does brown rice. Hemp and pea protein are okay and similar to soy, but might change the flavour a little!
Can i replace the protein powder with anything? I don’t buy it but I want to give this recipe a try!
Yup! You can replace it with equal amount flour. I’ve done it several times and it turns out just as great!
These were devine :) I added another scoop of vegan protein powder and 2 more tbsp of flax meal bc I did find it to be too runny. I let the batter sit for a few minutes before cooking, and they turned out fantastic! Thank you!
Happy you liked them! I always recommend adding the milk until you get the desired consistency. There are so many factors that can change it!
