Hi friends! Hope everyone’s week has gone by swimmingly. Mine’s been pretty relaxed – definitely needed and appreciated :)
My alarm went off at 5:45 am and I had second thoughts about going to the gym. Actually, I do not hop out of bed bright-eyed and bushy-tailed every morning. I’m quite grumpy until I get some food and caffeine in me. I think the key is to just know that the haziness doesn’t last long.
Sooo, I hobbled into my gym clothes, walked into a few walls, ate half a banana and PB, chugged back a glass of iced coffee and stumbled out the door. Today was a treadmill day. Yup – straight up treadmill, because I FOUND MY IPOD!! Wooo! Here’s how my hour of running and entertaining tunes went down…

Loved being back at it! It’s been a few weeks since I’ve ran anything over 3 miles, but I did 5.3 pretty “easily” today. Next week I’ll get up earlier and do 10k ;)
Showered and went straight to work, where I risked my life to eat yogurt.
I mixed up the remainder of my Liberte Greek yogurt with cashew butter, maple syrup, cinnamon, shredded coconut and dates last night, then I left it out on the counter!! It was in my insulated lunch bag, so that probably kept it temperate for an extra couple hours. It smelled/tasted fine this morning so I just went for it. That’s $3 worth of yogurt right there!!!
I sprinkled on some fauxnola granola at the office. Dare I say, it was delicious! Nut butter in Greek yogurt is much better than in regular yogurt.
Chased down with some more iced coffee.
I actually prefer my coffee hot, but the iced stuff is quicker to drink in the morning. It’s also more thirst quenching after the gym ;)
Work was uneventful, I came home to a deep dish salad.

I often get comments from people noting how I can eat only five M&Ms or one Hershey’s Kiss at a time. First off, I don’t view these as a “snack,” but a teeny sweet treat after a meal. I usually have at least a couple sweet treats like this throughout the day. I rather spread it out than eat it all in one sitting. Plus, I suck on these eggs until they melt in my mouth – it takes almost five minutes!
Shortly after dinner I found the energy to go to yoga class. I’ve been putting it off all week, but was motivated by knowing tonight’s instructor does mostly gentle hatha. Plus, I got to wear my new Lululemon pants!
Yoga was actually challenging tonight! She had us doing a bunch of “bladder friendly” poses. Picture lots of frog poses and equally embarrassing legs-spread bum-in-the-air type things :P
I was pretty hungry by the time I came home again, so I immediately made another carrot peanut butter protein cake.
- 1 scoop (30g) vanilla whey protein powder
- cinnamon, nutmeg, ginger
- 1/2 tsp baking powder
- 2 tbsp egg whited
- 2 tbsp carrot baby food
- 1/2 tbsp peanut butter
All stirred up in a mug and popped in the microwave for 90 seconds. I topped it with marshmallow fluff watered down with almond milk. And sprinkled of course! Yumyum :)
I’m getting some great questions for my next round of Q&A’s! I’m going to dedicate whole posts to a few of them, and then just sprinkle them throughout other posts. Today’s questions come from the ever-talented Sophia:
1) What was your dream job when you were little? Was it journalism?

1) When I was little, I thought I was going to be a veterinarian. That idea was soon lost after getting an electric guitar for my 14th birthday, after which I was convinced I was destined for punk-rock stardom. There were brief periods where I though I wanted to be an English teacher, flight attendant, career barista, and MTV host. I think the most recent dream jobs have all involved communication to some degree, and that’s probably why I ended up doing journalism in university. It’s still my dream to communicate what I’m passionate about with people. That’s why I’m pursuing personal training, and hopefully will find a job writing about it!
2) Yes! More specifically – Burger King veggie burgers. I used to eat them all the time when I was a vegetarian and I love them. Even the sketchy mayo that comes on top. But I was a vegetarian between the ages of 14-22, what I would consider to be the fast-food “formative years.” So I never had a chance to develop a taste for greasy burgers and chicken nuggets. Also, I never liked fast-food french fries. I’m a Maritimer, I need a good potato!!

Helloooo! As with most Sundays, I have a ton of food photos to share! And I’ve got a ton more food to prepare for my day tomorrow – so let’s get to it, shall we?
Woke up this morning and made my mom and I a waffle feast.
- 3/4 cup rolled oats
- 1/2 cup cottage cheese
- 1/4 cup plain yogurt
- 3/4 cup egg whites
- 3 tbsp ground flax
- 1 tsp vanilla extract
- 1/2 tsp baking powder
I spent the morning lazing around. Sundays are meant to be lazy! By the time I’d gathered the energy to go to the gym, it was time for another snack.
Almond butter + banana. Basically the same thing I eat everyday before I go to the gym. Never fails.
Then it was off to the gym for treadmill, upper body and abs.

I wore my new running shoes today and they were awesome :) Amazing how much the cushioning wears down in just six months, I could notice a huge difference!
I went straight to the grocery store after the gym, so I picked up a Bolthouse Farms vanilla chai tea and drank it right in the store as I shopped. I was ravenous!
It was way sweeter than I was expecting! Not bad for 20g protein, but awful at 42g sugar in 450 mL. Blech.
Came home and had some real food, including a new (to me) food!
Armstrong garden herbs cheddar cheese.
I guess I can’t really call this a “cheesestring” as it’s not stringy. Cheese stick perhaps? Regardless, it was creamy, full-fat, treat :)
Then it was on to my weekly food prep!
It’s a lower-cal, higher protein version of regular granola. Subbing out puffed rice for some of the oatmeal. I followed the directions almost exactly and it turned out amazing. Seriously. Cooking down the maple syrup first, and then stirring in protein powder, gave it such an awesome flavour!! Once you’re done making coconut chia granola, go make this :)
In between stirring the granola, I got to work on Averie’s Vegan White Chocolate Chocolate-Peanut Butter Cups.
Except I used totally non vegan ingredients ;) As with most of Averies’ recipes, this one is super simple. Just stir up some peanut butter, cocoa powder, vanilla extract and agave nectar for the filling. Pour a little white chocolate into the cup, plop in your filling, then top it off!! Keep reading to hear the results of these bad boys.
Theeeen it was some Olive & Feta Hummus a la me ;)
- 1 can chickpeas
- 3.5 oz feta cheese
- 1/2 cup sliced black olives
- 2 small cloves garlic
- salt and pepper
All blended up in my food processor. This turned out great. I can’t wait to make tomorrow’s turkey sandwich with it.
Oh yes, and while all this was going on, I also roasted a chicken.
With some roasted brussels sprouts and parsnips. One of my fave dinners!
And the best part – dessert!
Ohheckyes, it was good. I was scared I didn’t sweeten the filling enough, but the white chocolate is so sweet it goes perfectly. The rest of these will be pawned off on my coworkers tomorrow, muhaha ;)
Okee doke, I hate to blog and run, but I have to go get ready if I intend to get up for spin class tomorrow! Have a great start to your week!!

Okay, honestly, I had no idea how to start this post, but at least I now have your attention :)
Totally loved hearing all the personal items y’all need with you at work. Hand cream and chapstick were definitely the most popular, with pictures and post-its slightly behind. Although Emily has rubber bands in the shape of zoo animals and Janetha suggested a day-by-day calendar. I was actually quite entertained by the responses!!
In other news, I was up at 5:30 am for spin class today. It was stellar as per usual. I’m actually starting to get to know some of the faces in the class. Not to mention, I feel hardcore in the bike jersey Chris got me for Christmas.
Came back home after to shower and celebrate Waffle Wednesday.
Work eats look disgusting, but I promise they were fantastic.
Morning snack was yogurt mixed with vanilla protein powder and strawberries. For lunch I had leftovers a la Leah! I have a fridge next to my office, and I’ve been eating in a cafeteria with a microwave. It feels like such a luxury to have a hot lunch! (how sad is that?). Anyways, it was Indian Cauliflower Stew with added shrimp. Afternoon snack attack was two carrot cake protein squares and a cheese string.
Nothing exciting to report from work. I ran into an old colleague at the drug store after, and he was asking me all about switching from journalism to communications. Or as reporters call it – “going to the dark side.” PR work is a whole different ball game. Totally different than journalism work. I feel like I have so much to re-learn (and forget!).
I bought a can of baked beans a while back after seeing them on Caitlin’s blog so frequently. I suddenly had a hankering for them and eggs for dinner.
Breakfast supper of champions.
With an egg scramble. Various veggies from the fridge with cottage cheese and laughing cow cheese. What really made it was the green olives I added. Green olives and eggs are such a fantastic flavour duo!
My three addictions wrapped into one. Date + PB + M&Ms. Times two.
So a while back, I was a recipient of a Beautiful Blogger Award by Averie – a beautiful blogger herself ;) It’s about time I display it proudly!!
- I don’t like wine. I’ve tried, numerous times. But I just never developed the palette for it.
- Babies scare me. They’re cute to look at, but please don’t ask me to hold or interact with one.
- I refuse to have the colour pink anywhere on my road bike.
- A childhood friend died downhill skiing when I was 10 years old. I’ve since developed a fear of ski hills and have only ever done cross-country.
- I only own two exercise bras. Instead of doing laundry every day, I often hand wash them in my sink between washes.
- The Beatles are my favourite band of all time. You will be “shushed” if one of their songs comes on the radio.
- I’m still wearing that headband. It’s keeping my forehead warm!
