Someone is the Owner of a Brand New Waffle Maker!

Whooaaa, thanks for all the compliments on my photoshoot!! Haha. They made me feel nice as I read them this morning, in my giant flannel pants, smudged mascara and gnarly hair :P

Okay, I won’t beat around the bush here. I know you’re eager to find out who won the free Belgian waffle maker!! Drumroll pleeeease…

I apologize to those of you who didn’t win, as I’m about to tease you with another Belgian waffle photo.

Seeing as I’m almost fully off the dairy now, I have to come up with a new protein waffle recipe. My old one consisted of cottage cheese, oatmeal, and egg whites. So today I mixed up a few things as I went along.

2 tbsp soy protein powder, 2 tbsp whey powder, 2 tbsp whole wheat flour, 1 tbsp ground flax, 1/4 cup egg whites, 1/4 cup almond milk, 1 tsp baking powder, cinnamon.


It got super crisp and crusty! I bet this would be okay as pancakes, but definitely needs tweaking for waffles. Anyone got a decent high protein, low dairy waffle recipe?

Topped with strawberries, homemade maple pecan peanut butter, sugar-free syrup and sweetened flaked coconut.

I usually buy unsweetened coconut, but we needed the sweet stuff for a cake recipe. Um, it’s rad.

Archie watched me from afar, he so wanted some.

I spent the morning applying for personal training jobs in Toronto! Not getting my hopes up though, applying for jobs online is a suck hole. People still like the old-fashioned resume drop-off.

The rain cleared briefly before lunch, so I had a sugary snack before heading out for a planned 5-miler.


Two of the medjool dates I bought at the natural food store yesterday, stuffed with almond butter. I usually buy teeny tiny honey dates because they’re cheap. Whoa. These medjools are ginormous and mega sweet. Two was definitely one too many for me, which is saying a lot.

I actually mapped out the run today beforehand, planned for two loops around the lake.


Not to be a complainer or anything, but I really miss my trail in Fredericton!! Wain! I miss my gym too, learning to exercise in different environments may be the hardest part of moving for me.

On the bright side, there are a few hills around here and I was able to challenge myself in a new way :) Oh, and I totally ran past an old high school boyfriend on the sidewalk. Thank gaaawd I was disguised in my ballcap and sunglasses.

Came home and iced my feet, ankles and knees while eating a big ole salad.

My mother’s usual salad bowls no longer cut it, I had to revert to one of her mixing bowls.


Apparently running up hills makes me hungry for whole romaine hearts??

With leftover spicy buffalo buffalo meatballs in mustard/mayo/olive oil dressing.

On the icing, I remember getting a question a while back on why/when to do it. I ice after long runs to prevent pain after. I never get pain in my muscles or joints during a run. If I do, I stop. But often when I do longer runs, I’ll get pain in my feet, ankles and knees a few hours later, and it can last a couple days. Bringing the inflammation down with ice, and sometimes ibuprofen, gets rid of it 99%.

Despite the super sweet dates earlier, my inner chocolate monster still needed to be put to bed.

Please disregard the flour on this bar – it’s from making the homemade doggie treats ;)

Pretty stellar ingredients for a chocolate bar, no?

And it was on sale! Oh yeah, it was delicious. It was chocolate ;)


This afternoon I whipped up another batch of homemade protein bars.


Much like this recipe, except I used two cups oat flour (ie oatmeal ground in the food processor). I also left out the raisins and used 2 tbsp pure maple syrup instead of the fake stuff. I seriously missed not having these at my mom’s!!

The rest of the afternoon was spent shopping with my Nana! Yes, my 87-year-old grandmother was looking at yoga pants with me, because she does yoga too!


I ended up getting a pair of Merrell hiking shoes for my trip to Banff, Alberta in June. I’m hoping they can double as walking shoes, as my feet DO NOT like walking in my running sneakers AT ALL.

As a side note, while I was at the shoe store, three different women came in looking for Reebok Easy Tone shoes. Sigh. The salesperson was thankfully knowledgeable, and warned the women they could lead to further pain down the road. When I asked him about it, he said he’s never seen a shoe sell as much as that one! Double sigh.

Back to the food.

And no, I’m not on the baby food diet.

I mixed it with some of this stuff…


Soy protein powder, baking powder, cinnamon and egg whites.


Popped in he microwave for a couple minutes, and a protein cake is born.


Topped with more homemade maple pecan peanut butter.

Question of the Day: Runners- what sort of routes do you prefer? Out-and-back? Loops? Pavement? Trail? Treadmill? Flat? Hills? I realized today that I much prefer out-and-back routes to loops. Loops just feel longer! And I love a soft squishy trail, no pavement or sidewalks please.

I Don’t Monkey Around

Hello friends!!

I have tons of yummy food pictures for you today, so let’s get to it!

I slept in until 8am today. Apparently, it takes four days to break out of your sleep routine. Noted.

However, the late wake-up call meant I was rushed this morning. Started off with a bowl of cream of wheat which always cooks up quick.


I don’t think I’ll get through this box before I move. However it was delightful topped with All Bran, molasses and almond butter.

Then I got straight to work in the kitchen. A co-worker from my now old-job, celebrated her birthday today. I promised I’d show up with a treat, and to be honest, I couldn’t give up the chance to bake for somebody!

Last week, she was on the quest for the perfect cinnamon bun. I tucked this away back in my mind, and when word of her bee-day came up, I knew she was destined for some monkey bread.


I’ve never had or made monkey bread before. After many google searches, I decided on this recipe. The only change is that I used two cans of biscuits, 1/2 the pudding mix, and added 1/2 cup brown sugar.

I’ve heard they call it “monkey bread” because it’s “so easy a money could do it.” I would have to agree.

Cut each biscuit into quarters, dip into melted butter, then shake up in your cinnamon sugar mix.


And build your loaf of bread!

It’s traditionally done in a bundt pan, but I don’t own one. Nor was I adding to my kitchen collection when I’m about to pack it up.

After that first piece, I got a little wise and started doing eight at a time. Went much faster.

Popped in a 350F oven for 35 minutes.

Mine browned a little on the top, which is a shame. But it was a sacrifice I had to make to cook the center.

I had some of the cinnamon-sugar mix left, so I mixed it up with the remainder of my melted butter.

And spread it on top of the loaf. Mmmmm…

I couldn’t stick around for the loaf feast at the office, but it got nothing but good feedback. Hopefully it cured my co-worker’s cinnamon bun craving!

Instead, I snuck a piece fresh out of the oven as a little pre-run snack ;)


Totally against my “no refined sugars” thing. But exceptions must be made in certain instances! This is most definitely one! I must say, the butterscotch pudding totally made this recipe. It gave it a sweet caramel-y flavour. I highly suggest you add it to your next monkey bread :)

The refined sugars of course were the perfect fuel for a quick 4 miler along my favourite trail. Holy beautiful day!!! Bittersweet, as it’s probably my last run along the riverfront trail. The same trail that taught me how to love running :) Additionally bitter because I got a sunburn. At 10am. In May. With sunscreen on. Ridiculous.

The rest of my day was a whirlwind. It included donating 4 boxes of books to the library. Times like those I’m glad I lift weights! I did a lot of deadlifts with those things today :P

I also went to the doctor as a follow-up to my skin thingy. I’ve been on antibiotics for a month now because of an infection of the hair follicles in my legs. It’s cleared up a lot in the past month, but the doc wants me to continue taking them for two more months to ensure it’s completely zapped. Unfortunately there’s a worldwide shortage of tetracyclene or something, so that issue is not sorted out yet. Nothing is ever easy, is it? I’m not really keen on being put on stronger antibiotics for any length of time either…

At least I had yummy snacks to keep me going :)


Totally forgot I put maple in the homemade protein bars. Got a pleasant surprise when I bit into it!

Dinner was leftovers made into a salad. 


The lentil-bulgur-hummus-feta-tofu mash up, baked into little patties.


On top of some “sweet potato chips.” Ie thinly sliced sweet potato dusted with salt and spices.


I drizzled some balsamic on the spinach, and the flavours happening on this plate were out of this world. Tangy, sweet, salty, good times.

This evening, I added three more bags to my garbage pile. Throwing shit out feels awesome! Goooooodbye baggage! :)

Just finished up a microwave protein cake.


30g peach-mango whey protein powder, baking powder, cinnamon, 2 tbsp applesauce, 2 tbsp egg whites.


Topped with almond butter. The fruity whey powder made an awesome tasting cake.


Now it’s time for me to get back to packing! I’m catching up on Gossip Girl while doing it, which is making it a little more bearable (and scandalous).

So, here’s a breakdown of some things happening:

  • Final meeting with landlord and subtenant tomorrow. Could go badly, hoping it goes well.
  • Doing my personal training practical exam on Wednesday!! *insert hyperventilating here*
  • A BIG giveaway announcement tomorrow, Wednesday. I highly suggest you come back for that one ;)
  • Thursday, I am hoping to pack my Ford Focus up with as much as I can, and drive it to my mom’s
  • Thursday will also have a post on tips for staying healthy in college
  • Seeing as I’m feeling overwhelmed, moving to mom’s may happen Friday
  • Saturday, come pick up my big furniture with my dad and a truck
  • Sunday, hopefully relax, and celebrate Mother’s Day :)

Right now I’m just trying to focus on the short-term and doing what needs to get done each day. Thinking ahead elevates my heart rate too much.


Phew. That felt good.

If for some reason, I’m not back tomorrow, it means I just fainted doing my practical. No worries :P

Off and Running – New Goals!

Hap-p-p-y weekend people!! Or, if you’re like me, happy funemployment ;)

Today was quite possibly the best way to kick off the month of May. It was gorgeous!


Was up at 6:30am with the sun streaming through the blinds. Wonder how many days of unemployment it will take until I’m no longer up at this time?


I must say, I’ve done a spectacular job at cleaning out my freezer. This morning, I had a couple Nature’s Path Pomegranate waffles with fried eggs on top. Yolks on the verge…


I’ve been asked how I fry my eggs without breaking the yolk (I always flip, never sunny-side up). My trick is that I grease the pan. Today I used butter. It was glorious.


Avec some yogurt and Grape Nuts. This will be my last serving of yogurt for a while. I’ll explain why below!

After digestion, coffee and some extra munchables, I was off and running!


It was 13 C by the time I made it out the door, and heating up quickly. I did something I haven’t done on a run in a while – I bared my shoulders!

Also wore sunscreen. Very important!!


And don’t forget the little hole on the back of your Lululemon top. Or else you will end up with a random red dot on your back until November.

Or, so I hear.

With the warm-up and cool-down I was out there for about an hour. 5-ish miles? I haven’t run in almost two weeks because I hurt my foot walking last weekend. I wanted to give it more than enough time to heal before attempting to run, and it actually took days for the pain to go away! No pain running today. In fact, besides a head wind on the way back, it was near perfect.

Although, I’m not sure if I could post a picture of myself first thing in the morning like Lori did. My hair takes on a life of it’s own in the twilight hours.

Post-run meal was a giant bowl of goodness.


Stir-fry with chicken, tofu, bulgur and frozen veggies.


What made it really out-of-this-world though was the addition of hummus, olives and feta. Stir-fries aren’t just for soy sauce.


It was amazing. Plus, I used up a fraction of the grains in my cupboard!

Even though I had my morning run out of the way, I still owed the pooch an afternoon walk. It was getting even warmer, so a stroll in the sunshine sounded nice :)

We stumbled upon this spooky looking path, and my curiosity got the best of me.


I mean, I was protected by a poodle, right?


The river was high today and wrapped around a bunch of gnarly trees. Verrry spoooky.

And then we found a graveyard!!


Random. I had no idea this trail existed, or that it had a graveyard.


Archie was completely thrilled by the adventure. Pretty sure our long walks are the highlight of his day.


Remember when I was complaining about the bare trees? Well it’s starting to get green!!



Hurrah! Summer is on the way!

Poor Archie didn’t quite make it home though. He started struggling on the last hill. I looked down at him and said “C’mon Archie! Dig deep!” But he started limping, so I was left carrying at 14 lb furball in my arms up the rest of the steep hill.


He came home and wiped out at the bottom of the stairs in between all my shoes. I thought I’d finally done him in. I went out, worried about him the whole time, and came back to the usual enthusiastic tail wag and energy. We need to work on his stamina, but his recovery is pretty good!

Last but certainly not least, it’s time I mark the first of the month with a new set of goals. Let it be known that I am stealing the “themed goals” idea from Janetha ;)

Strength train three times a week, with a focus in muscular power.
Run twice a week, increasing my mileage by 10% each week

Stop buying dairy, eating it only when out or when it’s “a must”
Stay away from refined sugars, again eating only for special occasions

Add and organize content, new recipes, workouts, and revised pages and categories

Improve my organization. Make lists, finish them, know what needs to be done, when.
Spend time with my family
Enjoy and soak up every single minute.

There is so much more I’d like to do, but I think it’s really important not to overwhelm myself this month! I’m hoping to be moved out of my apartment by next weekend, then live at my mom’s until I move to Toronto at the very end of the month. It’s going to be a weird transitional period for me. But it also has the potential to be a fabulous month ;)

As for my nutrition goals, I have been inspired by Sammie, who is doing an 8-week Operation Bootyfication as a fun way to help prep for her upcoming fitness competition. I am not fully participating, but I have been looking for an excuse to eliminate refined sugar and dairy from my diet for a loooong time, and it was the perfect little kick that I needed ;)

The reason why I want to try this out is because I want to see how it makes me feel. Everyone reacts to certain foods differently, and I have a sneaking suspicion that these two are dragging me down. Especially things like yogurt and cottage cheese, which I eat a lot of.

Okay, and marshmallow fluff too ;)

I still have some of this stuff on hand, so I’ll still be snacking my way through cheese strings. But the amount will be significantly decreasing, so it’s a move in the right direction. Of course, I’ll keep you updated on the results! (Fatty February by the way, is still in full swing!)
