Going through my food photos, I noticed this one from last week that I never shared with you. I swear, it’s not because I am ashamed of it.
That would be oatmeal in a Fluff jar topped with chocolate peanut butter and strawberries. The fluff melts and becomes a sweet syrup. SO good.
Apparently, oats in a jar continued to be a popular breakfast into this week.
Either that, or I have a tendency to blow through fluff and peanut butter at the same pace ;)
One of my pet peeves used to be the hard bits of nut butter at the bottom of the jar, but putting oatmeal in it solves that problem. What’s that purple stuff in there you ask?
Jam of course!! When you’re out of fluff, jam is the next best thing to pair with PB ;)
This morning I got a grip on myself and ate breakfast out of a bowl.
Yogurt with protein powder, dry oatmeal, cinnamon, blueberries, almond butter, and the kicker…
Mint. If I could keep plants in the house without killing them, mint would be my herb of choice. Not just for the mojitos, but it makes for an excellent yog-mess topper!
In a perfect world, blueberries would also be in season all year round ;)
You may recall that I tried fresh figs for the first time not that long ago, and wasn’t that impressed.
Verdict? Much better! The center was a lot sweeter and more flavourful. Thumbs up!
I may not be baking much these days, but I sure am making lots of summery salads!
I meant for this to be a quinoa salad, but when I opened my cupboard all I had was pearl barley. I still think quinoa will be better, thus, that’s what I’m putting in the recipe ;)
Hearty Tofu Quinoa Summer Salad
- 1 cup dry quinoa
- 2 cups water
- 1 small sweet potato, cut in 1cm cubes
- 1 15oz can black beans
- 1 block tofu, cut into 1cm cubes
- 1/4 cup chopped red onion
- 2 limes, juiced
- 2 tbsp olive oil
- 1/4 cup fresh cilantro
- 1 tsp dried chilis
Cook the quinoa, sweet potato and tofu in the water for around 20 minutes. Stir in the remaining ingredients and let chill in the fridge for several hours (one day is best to let the flavours come out!)
I tossed some of the leftovers with spinach, zucchini, green pepper and tomatoes today for lunch. Yumyum!! I am aalll about the protein packed summer salads these days ;)
Supper wasn’t quite as successful.
It started good – a Rowe Farms Italian Sausage on toasted rye bread from Brick Street Bread.
Both are exceptionally tasty, made better only by the addition of ketchup, mustard and sauerkraut.
But then there was this pile of green…
I normally love piles of green food. I though this frozen broccoli rapini would be no different. For lack of a better word, ick. It was chewy. Could not chew enough to swallow and the taste wasn’t that great. I get rapini is not one of those veggies that freezes well…
I also have some big news!!
Two pieces of news actually…
First, I finally picked out something to wear to the Healthy Living Summit Cocktail party.
Yes, this is big news :P
You have no idea how much mental energy I have put towards worrying about this stupid outfit. I am not a fashionista. Apart from whether or not it wicks moisture, I do not care about my clothing to any great extent. I think it comes more from the fact that I’m cheap and can’t bring myself to spend my hard-earned bucks on expensive pieces of material.
I had a few old dresses I thought I could wear to the event, but I didn’t feel right in any of them. And I’m all about feeling good in your own skin. You will have to wait till Friday to see my new $30 dress :)
Also, apparently everyone is wearing yoga pants during the sessions on Saturday. But I haven’t worn pants since I was in Alberta two months ago. I would have to disagree with the Gap and say that I do indeed look good in shorts. Anyone ever do yoga in jean shorts? :P
Okayokay, now on to the news that’s actually important…
I’m getting a Nutrition & Wellness Specialist certification!
This is something I’ve been wanting to do for a loooong time and the time is finally right. I’m doing it through Can-Fit-Pro, the same as my personal training certification. I’ll be given a textbook and take a weekend of classroom instruction at the Institute of Holistic Nutrition.
Right now, my hands are kind of tied as a personal trainer when it comes to nutrition advice. The new certification will allow me to give nutrition counselling and advising on top of creating fitness programs so my clients will sort of have the whole package. Diet is such a huge part of the fitness and health journey, it’s important that people get some info on that too!
My classes are in September and my exam in October. This is just another part of what will be a long education journey for me, I can’t wait! :)
Question of the Day: Are you a fashionista? What’s your favourite piece of fashion advice? One that I always follow is that I never show off my upper and lower parts at once. If I’m wearing a short skirt, then I pick a modest top. If I’m wearing a low-cut shirt, then I’ll go with something longer on the bottom.

Ohyes. I’m here to ramble about food.
I had to bring oatmeal back into my life this morning. An empty jar of nut butter demands it.
I previously pretty much scraped this puppy clean, so I added a little dollop of peanut butter and nutella on top for good measure.
And then I reeeeeally scraped it clean.
This image always entertains me. It looks like I ate a whole jar of almond butter with a spoon.
Not that I’m above that or anything ;)
Just so we’re clear, I’m not off the bacon yet either.
Someone *coughmymothercough* enjoyed themselves a little too much at a beer festival last night. She woke up craving a bacon sandwich, which in turn filled the house with the aroma of bacon. It’s a smell that can’t be denied once unleashed. I went straight to the bacon stash when doing up my lunch, adding an egg, mayo, tomato and lettuce between two pieces of ezekiel bread. Heaven.
I traded in my lifting workout today for a long walk with the dog. My body wasn’t too keen on yet another day of intense exercise, and the sunshine looked pretty darn inviting. Archie and I were out for about 45 minutes. He did really well this time, but still collapsed once we got home.
You’d think I had a death wish for this poodle. But I swear, it’s for his own good!
I was quite chipper after the walk. I’ve taken to listening to podcasts while on these jaunts. Today’s was Jillian Michaels’ show of course. She was talking about NEAT.
For the record, the poodle is alive. He’s sleeping at my feet, twitching from puppy dreams :)
Made my new favourite snack again this afternoon!
5 tbsp soy protein powder + 2 tbsp hot chocolate mix + 1 tbsp coconut.
Mixed up with almond milk until everything is dissolved.
It’s like ice cream, but better. Which is easy for me to say, because I don’t like ice cream ;)
Supper was a… you guessed it! Big salad!
The family went over to the step-grandparent’s place for Chinese food. The thought of it made my stomach turn, so I opted to stay home and eat salad while watching Gossip Girl.
It was a good choice. Have you seen the season finale!?!? Holy dramz. The dressing for this salad is White Bean & Grilled Red Pepper dip. Protein is tofu, base is kale and romaine and the “fun” is shredded swiss cheese. Solid.
Final May Goal Check-In:
Strength train three times a week, with a focus in muscular power. I only got two lifting workouts in this week. But the hard labour I did at the cottage counts for something… Right??
Run twice a week, increasing my mileage by 10% each week. Yay! I ran twice this week and my foot is pain-free! I did 2 miles on the treadmill then 6 miles outdoors.
Stop buying dairy, eating it only when out or when it’s “a must.” The only dairy I had this week (as in previous weeks) was one serving of hard cheese a day. I really like it on top of my salads, and I wasn’t ready to give that up.
Stay away from refined sugars, again eating only for special occasions. Failfailfail. Did you see that Nutella up there? I think this may make for a better short-term goal like Lori did. Doing this for a whole month is a long time for me.
Add and organize content, new recipes, workouts, and revised pages and categories. Hmm… I haven’t done anything new to the blog since I checked in last! Boo.
Improve my organization. Make lists, finish them, know what needs to be done, when. I organized my belongings and travel plans this past week, so that’s a plus. I still have a lot to do though.
Spend time with my family. Happy to not just be hanging out with my family, but my step-families as well (I have one on each side – including five step siblings!)
Enjoy and soak up every single minute. Now that my departure date is getting closer, it’s becoming harder not to get ahead of myself. So long as I have everything in place, whatever will happen in the future will happen. I need to enjoy right now :)
Overall, I feel pretty good about this month’s goals. I don’t think I hit both of my fitness ones in one week. But I was doing other activities instead, which is better than nothing.
As for my food goals, I will not be continuing them. I will keep an eye on my refined sugar, but I’m just not at a point right no where I can experiment by cutting it out completely. I fully expect to eat desserts when I go to Banff next week. I also didn’t notice a huge difference without dairy. I think I may allow one serving of yogurt or cottage cheese a day on top of the hard cheese. So two servings of dairy a day. My tummy will be able to handle that. I think it was the 5 servings I was having before that was the problem.
There will definitely be a few more blog updates before I start travelling. I also really enjoyed paying attention to my life goals this month. So many moments are now etched in my memory because I took a second to be still and absorb them. Bliss :)

My mother texted me today to tell me she will be back from Florida on Sunday and that she misses me.
Actually, after tomorrow I start the process of getting rid of my belongings and bringing what’s left to my mom’s place about 90 minutes from here. I’d like to spend as much of May there as possible before I move to Toronto June 1st. So she’s lucky. She’ll get her dog back after all ;)

Even though tomorrow is my last day at work, we all went out for a celebratory lunch today because my boss is out of town tomorrow.
My boss gave me full reign over the location. He told me this two weeks ago, and it took me two weeks to decide. This was serious business people!! I wanted to choose a spot that was relatively healthy, inexpensive (since he was paying) but had regular food everyone would enjoy.
Then I realized the one thing everyone loves is breakfast. Who doesn’t love breakfast at any time of day? So the group of us went to a local-ish place called Chez Cora that specializes in brunch-like fare.
Recycled photos. There is a time and place to take pictures of your food. This was neither.
But this is my favourite dish there, so I already have photos on hand! Piece of toast with a perfectly poached egg (someday I will do that!). And cottage cheese dumped on top of the fruit (minus the kiwi today, since I am now off it).
Afterwards, my boss took us to a place called Johnnie Java. A counter and espresso machine tucked in the back of a specialized import store. They roast their own beans there and supposedly have the best coffee in town. I got an espresso macchiato, and it was pretty darn good! Went down smoooooth. They also sell green beans there, so it’s my goal to try roasting my own (using Lori’s popcorn method) before I get rid of my popcorn maker. So, like, this weekend :)
The rest of my afternoon was spent sobbing over leaving my job.
Kind of ;)
Lunch was light, and even with my afternoon snack I was still starving for dinner! Threw together what is quickly becoming a staple around here.
Giant junk salad.
And…um…in case you’re wondering, I am still eating protein powder batter every night.
1 1/2 scoops chocolate protein powder, 1 tbsp cocoa powder, water. With sprinkles and chocolate chips. Tastes like chocolate icing. It makes me happy.
My eats are going to be repetitive, boring and random over the next little bit. Instead of apologizing, I’ll instead reassure you that they will get exciting again soon. I already have a dessert list of things to feed my step-siblings in Moncton, then a list of fun things to make in Toronto. One of my new roomies (hi Megan!) is a fellow foodie, so I suspect we’ll be having tons of fun in the kitchen :)
And with that, I’m going to wrap up this post with a little April Goals wrap-up.
Continue the spirit of the sleep challenge, aiming to get 7-8 hours of sleep a night. I got around 7-7.5 every night, which is all I can ask for. My body functions best on 7.5 now. Anything over that is just a distant memory…
Get rid of as many of my belongings as possible. Totally didn’t do this. But this is what I’m dedicating all next week to.
Get my bike on the road. Pffft!! It was SO cold ALL month. Any other Maritimers out there agree that we had sucky weather this month? Cold, cloudy or rainy most of the time :(
Pass my personal training exam. Check!! I passed my written exam :) My practical is next Wednesday. Eep!
Chill the eff out. No stress here. Now that I’m funemployed, I have nothing but time to focus on all my obligations. We will just ignore the fact that I no longer have a steady paycheck coming in….mmmkay?

My favourite restaurant is Calactus, a vegetarian/vegan restaurant in Moncton, featured here, here, here, and here. But my favourite dish there is the Big Marc Burger, blogged about here. Hands down, the best veggie burger ever!!
