Hellooo!! Gee whiz, thanks a bunch for all the compliments on my cottage pictures! To be perfectly honest, I’m a little paranoid that I’m, ahem, “filling out” a little since moving back home to my mom’s. So it was beyond awesome that some of you noticed all my hard work in gym paying off :)
Well, hard work I was doing. As there was absolutely no time spent in the weight room today. Instead, my day began at 6:30 am, a mere six hours after falling asleep.
I was hungry. I have this bad habit of waking up with my tummy in mid-growl. I’ve been like this all my life, it’s always a challenge finding a way to tame the beast!
I fell out of bed, hair wild, old mascara well on its way to my cheeks. Chugged a glass of water and felt my way to the kitchen.
Van’s mini waffles, sweet little breakfast cookies I like to think of them as. Dipped in a concoction of almond butter, protein powder, cinnamon, vanilla extract and almond milk.
I remember this being delicious. It truly is all about the dipping. It’s a lot more fun than topping and dripping everywhere.
I then stumbled back to bed, read a few blogs, and promptly passed out until 10am.
The second time around was much better. I was functioning enough to put on a pot of coffee and became a member of the living once again. My mom is still getting used to this bad habit of mine of getting up early to eat breakfast then going back to bed. I’m sure this is not the healthiest thing to do… but it at least deals with that hunger beast!
By this time though, I was hungry again. My stomach doesn’t sleep while the rest of my body does.
This is a new-to-me Larabar flavour purchased while in Halifax not that long ago.
I don’t eat Larabars that much anymore because they’re too sugary and calorie dense for their size, despite the natural ingredients. But I do love the taste of them, now including this flavour!
I can confidently say this is my second favourite flavour now (after PB&J). Although, I really want to make my own version of this. The ingredients are just dates, peanut butter and peanuts. Easy peasy!
I then proceeded to get lost in a vortex of planning and booking various travels. My stomach eventually told me it was lunch. But not before I had to start “la-la-la-ing” and shut off the TV when Whoopi Goldberg started talking about the Lost finale. I haven’t watched it yet!!
Fridge was empty after our weekend getaway. Scrounged together an egg and bacon salad with mayo, onion, celery and red pepper, spread on top of ezekiel toast.
Bacon is my new love. I never used to buy bacon when living alone because it intimidated me. But it is plentiful in my mother’s fridge and I like it. I like it a lot.
This afternoon I re-packed all my belongings. I hate packing. But I think I hate unpacking everything and repacking it more. It called for an afternoon chocolate fix.
Ohyes, I’m still eating my little bowls of protein brownie batter! This version is 40g natural whey powder (unflavoured) with 2 tbsp hot chocolate mix. Made fudgey with a dash of water and bits of chocolate chips. I’m easy to please, and this did the trick :)
Mark (my mom’s boyfriendlifepartner) showed up with arms full of groceries just as I was beginning to gnaw on my forearm. Score!!
I called him today and requested kale be in this week’s haul. I’m obsessed with this stuff you guys. Best salad base ever.
Just rip it off the stem and mush it all up with your hands. It softens the leaves (leafs?) and gets rid of the bitter juices.
The usual combo with tuna as my protein, hummus as my dressing, and feta as the extra sumthin’ to make my tastebuds happy :)
Monthly Goal Check-In:
Strength train three times a week, with a focus in muscular power. In case you are wondering, “muscular power” means “plyometrics.” I hate plyo. Hatehatehate. But I did do a little of it in my weight sessions last week. Progress!
Run twice a week, increasing my mileage by 10% each week. I only ran once, a 4-mile trail run at my cottage. My foot feels fine – I really think it’s the walking that’s killing it! Strange.
Stop buying dairy, eating it only when out or when it’s “a must.” I’m still essentially off all cottage cheese and yogurt with 20g of hard cheese a day. Nothing new here, but I will be writing out some thoughts on this at the end of the month.
Stay away from refined sugars, again eating only for special occasions. Wain! I love sugar! I had Oh Henry bars and cinnamon rolls, and a piece of Queen Elizabeth Cake my Nana conveniently froze for me. I think this goal was doomed from the start.
Improve my organization. Make lists, finish them, know what needs to be done, when. Check! I got a handy dandy notebook and have been writing all the important details of life in it. Amazing how much stress can be relieved just by transferring it to paper.
Spend time with my family. This has been my life as of late. I love it.
Enjoy and soak up every single minute. Step classes with my mom, Lost nights with my dad, even cleaning out a cottage with my big sis. I will cherish these moments for a very, very long time :)
Now, some other updates in my life for those of you who may keep track (which, really, is sort of impossible these days). I’d been planning on moving to Toronto for June 1st, but there’s been a change in plans! I’m staying at my mom’s a little longer. Here’s what my new future looks like:
June 9 – Fly to Calgary, Alberta from the Maritimes.
June 10 – Go into Banff for what promises to be the blogger journey of a lifetime featuring Holly and Karen.
June 16 – Fly from Calgary to Ottawa and spend 10 days hanging out in my big sis’ sweet bachelorette pad!
June 25 – Train to Toronto with my sis and stay there for good!!
Well, there will be another trip to Ottawa in July, and the Healthy Living Summit in Chicago in August, but Toronto will be my new home :)
Needless to say, figuring out the logistics of this has been slightly mind-bending. Hence the need to unpack and re-pack my things today. I won’t sugar-coat things. I haven’t worked in almost a month and I’m flat broke. I’ve tucked away some spare change for some of this madness, but I’m also a very lucky girl to have a family that can support my falling back on them. For some reason they aren’t sick of me yet and are more than willing to help out.
In the meantime, I’ve got to get to bed. There will be some plyo in the gym tomorrow, all before an 11am folk concert!

Well hello there! How is everybody doing? How is your airway? Your breathing? It’s okay, I’m a trained First Aid responder.
CPR is actually only a fraction of it. I can also now dress and bandage any wound imaginable. I also learned that “RICE” now stands for Rest, Isolate, Cold and Elevate. They changed the acronym so they have an excuse to make people go back and pay for the course again :P
Before all that though, I was up in the middle of the night (5:30) for a jaunt on the treadmill at the gym. I don’t always photograph the small snack I eat before my a.m. workouts, but I need to eat something as soon as I get out of bed or I die.
Butt-end piece of bread with PB&J and my secret weapon to early morning workouts – iced coffee. I guzzle this back in less than five minutes and it’s like a jolt of energy to my veins that carries me through my workout. I know some people are iffy about caffeine, but I really like having a little before workouts as a performance booster.
I went for the usual 5-mile speed run. I’m going to get sick of this eventually, but so far I still love it :)
On a 1% incline:

I cannot believe that 7.0 mph is almost a “normal” speed for me now. At this exact same time last year, I would regularly do this same treadmill workout and my highest speed was 6.4 mph! Crazy. Sometimes I get so focused on improving my current fitness, I forget how much I’ve already improved!
I still had PB&J on my mind once I made it back to my apartment, so I incorporated it into my oats.
Leftover steel cut oats (ccoked with banana & vanilla protein powder) topped with awesome peanut butter and jam.
Natur all natural 100% peanut butter and Crofter’s strawberry jam. Y’all know I’ve been having a love affair with Crofter’s. But I’m pretty sure of all the jams out there, plain ole strawberry is my favourite. I’ve been wanting to try this peanut butter for a while (I think my dad used to buy it?) and it was on sale so I finally splurged. SO worth it! I love my nut butters crunchy and natural. No salt, no sugar, extra chunks please :)
Then it was off to first aid class, with the luxury of a 90 minute lunch break to come home and make lunch.
I kept up the yummy theme for dinner. Stuffed a chicken breast with peanut butter hummus and put in on top a bed of sauteed kale, spinach, garlic, mushrooms, onions and green pepper.
With a baked sweet potato covered in cottage cheese.
Aaallll together now…
Solid meal, I loved it :)
So starting tomorrow, I am officially a full-time employee at Starbucks. Scary! I’m not sure how long I’m going to stick it out there. After Christmas, I need to get my butt in gear and try to find a sub-let for my apartment. I reallyreally want to move back home. But I just didn’t feel like I could get my act together in time to do it before Christmas. The Starbucks job is essentially just a way to pay the bills until I figure out a way to get outta here! In a couple months, I’m hoping to move back home with my mom for a little bit until I get my feet on the ground. We’ll see! I just want to make sure I do not do anything that will tie me down to my current city any more than I already am. No more commitments or I’ll never leave! :P

Question of the Day: What’s your favourite kind of jam? Favourite nut butter? As mentioned above, strawberry jam is my favourite, but blueberry gets a close second. As for nut butters, I love them all, but natural crunchy PB will always have a hold on my heart (ahem, tastebuds).

I rolled out of bed for the 6am spin class today. Surprisingly, I had tons of energy! Must’ve slept decently. Lately I’ve been dragging a little, but today I felt like I just couldn’t push hard enough! It helped my favourite instructor was back after a long hiatus. Funny how a good instructor can make all the difference in an exercise class!
I prepared a pot of steel-cut oats last night so I wouldn’t have to waste any time this morning making a yummy breakfast. Just had to pop it in the microwave!
One serving steel-cut oats cooked with vanilla protein powder, cinnamon and topped with dates and almond butter.
Then I rushed out the door to Day 1 of my First Aid course. I’m doing two 8 hour days of first aid training that’s required for my personal trainer certification. My class is uh, interesting. I’m usually the type of person who is nice or at least polite to anyone, regardless of how they come off. But wow, my class consists of some crazy characters! Two people actually got into an argument while going through how to use a defibrillator. It was intense.
Regardless, I’m finding it really useful. The way I see it, there’s a good chance someone will go down while I’m working in a gym. So I’m taking it seriously. Thankfully, our teacher is fully sane and a very experienced paramedic and nurse. Lots of good info!
The best part was that I got to come home for lunch. Not having to pack a lunch feels like such a luxury!
However, I did boil two eggs last night in preparation for my lunch, so I turned them into an egg salad with mayo, pepper, onion and green pepper, then put in on toast. And the mandatory side of orange ;)
And what’s lunch without dessert!?
My advent calendar chocolate and some dark chocolate M&Ms. A little goes a long way. As in, that way you can have a little after every meal ;)
After I got out of class, I fiiiinally hit up the grocery store. I didn’t do too bad considering there were some cleaning and beauty products on the bill as well. Except, I was planning on making butternut squash soup as my “big dish” this week, and there was only one near-rotten b-nut squash left. Boo :(
To make room for the new food, I finished up the remainder of last week’s “big dish”.
Soooo, this is shaping up to be another crazy busy week for me. Ahh! How did that happen? I don’t have a day off till Saturday, which will be 16 days from my last day off. I’m not complaining, I know some people have it just as bad, if not worse. I was just hoping this would be a period of “catch up” for me, and it’s turning into the exact opposite. I’m falling even more behind!! My apartment is thisclose to being taped off as a hazardous zone :P Oh well. I can always hope for next week… Right…?

1) What are your favourite ways to change up leftovers? I like to put them on a bed of greens, in a pita, stuff veggies with them, add cooked grains, or even just add different spices or salsa!
2) When you’re low on spare time, what things take priority? Even though I’ve been crazy busy lately, the two things I refuse to ditch are my workouts and food preparation. I feel so much better when I’ve worked out and have good food in my belly. Unfortunately, that has also led to a piles of both dirty clothes and dishes :\
