Happy weekend!! I’m on the eternal weekend over here… I’ve been unemployed for exactly 8 weeks now! Or, I should say, “without work.” It’s an intentional stint of unemployment, but I am getting antsy to get my hands dirty again :)

There is chicken bacon in the fridge that needs to be eaten up, but I also really wanted pancakes for breakfast.

So I made both.

Mixed up a double batch of my oatmeal cottage cheese protein pancakes (minus the sweeteners) and threw in the cooked bacon.

I do not recommend this cottage cheese.Watery with a rubbery taste. Ew.

Bacon and maple syrup are an amazing combo… too bad I’m hooked on the sugar-free stuff.

As a side note, Sister Sara ate hers with real maple syrup and half a banana. She’s a girl who knows how to do it right ;)

I spent all morning putting 118 Banff photos on Facebook so my dad can see them.

It was a gruelling task that had to be fuelled by a High Protein Banana Bar with greek yogurt. Parfait a la K!

Then I received this text message:

That was all the push I needed to get my butt in gear and to the gym!!

I ran the 7 minutes it takes to get the gym. I LOVE being able to run to the gym. It makes weight days seem so much easier. I just run there, do my thang in the weight room, and run back. None of this cardio machine silliness.

Another full-body day with an emphasis on the upper body. My glutes are still hammered from my last session!

Colour coded again! Matching colours = alternating sets. Even though I only did one isolated ab move, I feel like I got a good core workout with this one. Those dumbbell pullovers require a lot of stabilization in that area.

Refuelled with a big ole’ green salad in anticipation for my rib feast later. Just the typical garden salad with tuna for my protein, mozzarella cheese for my fat, and watered down hummus for the dressing.

Then it was on to my special project for the day.

I had a whack of rosemary left after making boeuf bourguignon. My mind immediately went to Banff. The yoga studio we went to was located above a bakery that smelled like herbed focaccia. It was mouth watering.

For some reason though, I didn’t feel like focaccia. No, I wanted biscuits. Something I could eat with eggs in the morning, or perhaps a rack of ribs ;)

Buttermilk biscuits are traditional, yes, but silly when you also have a tub of yogurt in the fridge waiting to be used.

A quick Google search lead me to this Emeril Lagasse recipe.

Rosemary Biscuits:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon baking soda
  • 3 tablespoons cold unsalted butter, cut into small pieces
  • 1 tablespoon minced fresh rosemary leaves
  • 1/2 to 3/4 cup buttermilk 3/4 cup plain greek yogurt

Preheat the oven to 450 degrees F.

Sift the dry ingredients into a large bowl. Work the butter into the flour with your fingertips or a fork until the mixture resembles coarse crumbs. Stir in the rosemary. Add 1/2 cup of the buttermilk a little at a time, using your hands to work it in just until incorporated and a smooth ball of dough forms. Add up to additional 1/4 cup buttermilk if necessary, being very careful not to overwork the dough or the biscuits will be tough.

On a lightly floured surface, pat the dough into a circle about 7 inches in diameter and 1/2-inch thick. Using a 1-inch round cookie cutter, cut out 12 biscuits.

Place the biscuits on a medium baking sheet. Bake until golden on top and lightly browned on the bottom, 10 to 12 minutes. Serve warm.

Yield: 12 mini biscuits (I got 20)

I really hope my new apartment in Toronto is well-cooled. I don’t know how I’ll survive baking with a 450F oven otherwise.

They were done in 10 minutes flat and smelled heavenly. Almost as good as Rocky Mountain Yoga!!

I calculated the nutritionals on these, and because they’re so small, one biscuit is only 44 calories. #win.

As per the baking rules, I had one immediately out of the oven with butter.

My first ever batch of biscuits were not only downright delicious (toot toot) but also crazy simple!! I keep passing all these wonderful bakeries here in Ottawa, and then think to myself that it’s so much more fun to just bake at home :)

Afterwards Sara and I went to a 90-minute Hatha Flow class. It was pretty fun! I did this:

Just with the assistance of two people and a couple straps ;)

Then it was time for RIBS. Ohbaby.

Ottawa has this thing called Ribfest where a bunch of restaurants set up grills down a pedestrian street and sell nothing but pulled pork sandwiches and ribs.

People get pretty excited about it, but I can’t think of a more messy food to eat on the side of the street.

And my first ever pulled pork sandwich!! It was good, although a little too much on the sauce-y side for me. How is it that ribs don’t taste like the rest of the pig??

Anyways, as you can see this was all incredibly delicious. But mygoodness I am paying for it now. Too much barbecue sauce for this tummy. It’s awfully hard to indulge when my stomach insists on rebelling like this!!

I hope it’s better for eggs and biscuits in the morning :)

  2. Those Rosemary biscuits look SO good. I think I need to pick up some fresh herbs… I only use jarred spices/herbs, but the fresh ones are so much better. Awesome full body workout, +run, +yoga? You are a machine Susan!

  3. i love backbends! I do at least 10 per day, and drop back, stand back up, called tick-tocks. I love the way i feel from them….so light and open and fresh! you go girl!

    • I love them too! Our yoga instructor told us that some people are “back benders” while others are “forward folders.” I am definitely the former, I can’t do a forward fold to save my life :P

  5. The pig truly is a magical animal, isn’t it?
    I love BBQ. Pulled pork, brisket, ribs. All of it! Of course, I don’t have much now because it is hard to find a restaurant that serves local meat.

    Since you are unemployed, why don’t you come down here and we can start a bakery/coffee shop together? You have the knack :D

  6. I think you just blew my mind with the bacon in the pancake. I kind of want that right NOW!

    At rib fest they have people selling handi-wipes for charity- so eating on the street isn’t quite so bad when you can clean up afterward :)

    And I think I’m a back bender too- my ability to fold forward is seriously lacking.

  7. You’ve never had a pulled pork sandwich?! You poor deprived thing! They’re a staple around here (Farm Boy’s Barbecue ftw.) Those biscuits look so good and easy and clean… I wish I had the guts to try and make them, but I’m a failure when it comes to baking!

    Yeah for bridges! I love them. They’re the basic position for a lot of gymnastics stuff. I remember it took me almost a year to get it right. I used to be able to hold it for almost 10 minutes, and we would have races across the tumble floor (I would always end up getting confused and moving my hands and feet in opposite directions!) Ah, I miss gymnastics so much.

    The bacon cottage cheese pancakes? I would file that under “just crazy enough to work” and then fall madly headoverheels in love with them :-)

    I can’t say that I love backbends- in fact I avoid wheel sometimes and just do bridge like a wuss. :-)

    Maybe it’s because i live in Ottawa too, and that I’ve been to Lake Louise as well (I used to live in Calgary), but ever since I have come across your blog, I love reading it! My two friends went downtown and stumbled across the rib festival, and now I’m craving ribs, lol.

    Anyways, I hope you are enjoying your time in Ottawa (:

    • Thank you Monica!! I am loving Ottawa so far… I’m not sure how Toronto is going to compare when I move there next week! And I highly suggest the pulled pork sandwiches at Ribfest if you make it… I hear they’ve got coleslaw for some greens and good measure ;)

  13. I don’t typically care for ribs, but these look amazing! That’s perfect that you can get your cardio in running to and from the gym. My gym is about that far away as well, but there are no sidewalks and one very busy intersection to cross.

  14. I have had two different versions of baby back ribs in the past two weeks- and damn I think I forgot what living was all about! They. were. so. good. Same with burgers. I’ve had more burgers since living in NY then I’ve had in the past two years (I’m talking legit burger inside the bun with all the fixings, no “no bun” thing) and they were the best burgers I’ve ever had! Yet.. I’m still the same freaking size! I haven’t gotten fat! It’s amazing to me that I’ve indulged in soo much good food here (like you’re doing right now i think) but it hasn’t effected my weight, All in moderation right?

    And those biscuits. You’re such a baker. I love it. :)

    • Hahaha, I bet you’re a lot more active too though!! I’ve maaaybe put on 2-3lbs in the last month. If anything I’m a lot “softer” because I haven’t been sticking to my typical “weight-lifter’s” diet. But I’ll have lots of time to get ripped again when I’m working as a trainer in Toronto. Sometimes you just gotta give in and experience the food around you :)

    • “In between opportunities” Sounds perfect! I’m being asked ALL the time what work I’ll be doing in Toronto. It’s hard enough to say “in between careers” let alone jobs ;)

  17. Umm, I’ll be making this soon! Do you think I could use whole wheat flour instead of AP?

    • Whole wheat usually makes these things a little more crumbly and dense, but yes it would still work! Usually for baked goods I do half and half with whole wheat and all purpose so it doesn’t affect the texture but I still get some of the whole grains in there :)
