Homemade Scones and an Awkward Flashback

Whoawhoawhoa.

How is it Friday again already?? And where did this day go?? One of those days that started out with a long list of things to do, then all of a sudden it was 4:30pm and only one of them got done.

Well, I did also pound out 6 miles on the treadmill thanks to a stellar new iPod playlist and The View being on the gym TV. It’s been rainy all week, so I took it indoors, going for my favourite 6-mile tempo run.

Then I met up with my mom and Nana at a diner where I enjoyed a big juicy hamburger and strawberry shortcake for dessert. Somehow this feast managed to escape the camera’s eye ;)

It did get me thinking about baking though. The strawberry shortcake was made with scones, and I’ve never made scones before. Once I get something in my head, it’s hard to shake it. I came home determined to whip up a batch of my own.

Mom doesn’t have a whole lot of ingredients currently on hand, so after a lot of perusing, I decided on this Whole Grain Maple Oatmeal Scone recipe.

From Eggs on Sunday

Ingredients
1 1/3 cup oat flour (such as Arrowhead Mills brand; if you can’t find that substitute King Arthur white whole wheat flour) whole wheat flour
1 1/3 cup old-fashioned rolled oats (not quick-cooking)
1 tbsp baking powder
3/4 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 cup brown sugar
8 tbsp (1 stick) cold unsalted butter, cut into pieces
1/3 cup milk
1/3 cup yogurt (preferably Greek or whole-milk)
2 tbsp pure maple syrup

*Note: you can substitute 2/3 buttermilk for the milk + yogurt if you’d rather.

For brushing and sprinkling on top of the scones:
1 tbsp milk
1 tbsp maple syrup
2 tbsp oats

I mixed together the dry ingredients, then pulsed them in the food processor, adding the butter one hunk at a time.

Once it started to get crumbly, I put it back into the mixing bowl and poured in the syrup, milk and yogurt.

I looked into why instructions always say to mix the wet and dry ingredients separately. Some sources said because the dry ingredients are more evenly distributed. Others said because powder/soda will begin to react immediately when they get wet.

Short answer is that it’s how good bakers always do it, and so it’s what you should do too ;)

Instead of rolling the dough out into one big round, I divided it into two, shaping 6 triangles out of each.

And of course, we must make it pretty with a little oatmeal glaze ;)

Baked for 15 minutes exactly and they came out perfectly!!

They smelled sooooo good. It was just my mom and Mark home this evening, but even they were starting to wander into the kitchen once the scent hit the air.

I am proud of my first batch of scones! Even more, impressed by how easy they were! I’ve never considered myself much of a baker, but it’s a really fun hobby when you have a nice kitchen to do it in :)

They are very crumbly and biscuit-like, but with a sweet oatmeal and maple flavour. Mark gave them a “gold star.”

Baked goods must be enjoyed almost immediately out of the oven with butter slathered on top. It’s the rules!!

For the sake of balance, I paired my scone with a salmon salad for dinner.

Flashback Friday – The Awkward Years

I don’t know what is wrong with me, but I seem to be all too enthusiastic to embarrass myself on this blog. Hence, the theme of this week’s Flashback Friday.

I thought it would be fun to go back to the dozens of different hair colours and styles I’ve had over the years. I couldn’t find a picture for each, as the colour and cut were at times changing monthly. I’ve had my hair buzzed short and grown to the middle of my back. It’s been black, brown, red, purple, pink, green, blue, blonde, orange, and all the lovely shades in between.

I first started dying my hair when I was 13 years old. I was a natural blonde, so obviously I wanted to go dark.

I get a kick out of this picture because it’s before my mom’s kitchen was renovated! It looks so different! That plant in the back is where the stove/oven is now – we didn’t have one back then!

When I was 14, I chopped it all off in the back and dyed the front pieces pink. I thought it was so badass. This was 10 years ago when my big sis Jane graduated high school!

Jane went on to La Belle Quebec, and we visited her when I was in Grade 9.

Awkward growing out stage with the hair. When it got long enough I wore it in pigtails all the time. This was also the beginning of my baby-bang phase. Sigh. Why?

When I was 16, I went to Mexico with my mom to visit Sara who was studying there at the time. Everyone had been telling me to go back to blonde… so I bleached it. Shortly after returning home, I dyed the whole thing hot pink.

I think this was the summer I was 17? This is close to my natural hair colour! But I specifically remember dying it strawberry blonde. The bangs are at least more under control. Don’t ask about that t-shirt. I found it in a Salvation Army bin, then traded it for a sweet 1970s Boston shirt with one of my friends ;)

My high school grad photo, taken in the fall I was 17. My best friend Desiree had died my hair the night before. I forgot to add that I used to braid my wet hair at night to make it wavy like that. Awful.

I went blonde again by the time prom rolled around. Notice the pretty girl on the right? That’s the bestie Meghan!! The girl on the left is Desiree, and she was my date. My boyfriend at the time was in the army and off training. Me and Des did the whole walk thing together when we arrived. It was hilarious.

Cropped Sister Sara out of this one because her eyes are closed, and I hate to embarrass anyone besides myself here ;) I think this was taken the summer after I graduated high school and moved to Fredericton with that army ex-boyfriend of mine. I actually kind of like my hair in this photo!

Haha. It’s not that different than it was in the pic in the sidebar – but I just got a bunch lopped off. I dunno, maybe I’m getting old or something, but long hair drives me nuts now. I’m also growing out my natural hair colour which is more of a dark-blonde these days. I did it a couple years ago, but it was when I was co-hosting a TV show and the light colour didn’t look all that great on camera. In person though, it’s still what everyone says looks best on me. Guess we’ll see – I’m too broke to keep dying it! :P

 

I can thank this gorgeous lady for my unruly locks…

  1. omfg, your hair cracks me up. i never colored my hair that much. i was a hair cutter fan. i cut it then let it grow then cut then grow. i went from really short to really long over & over.

    I gave myself a home perm in high school to save money. It turned out like a brillo pad and I had to pay to have it straightened again. Sigh…..

  4. Ha! Loved this one.. I did so many crazy hair things! My mother wouldn’t allow me to dye my hair until I was 18 so I had to get creative. Junior year I shaved the whole thing except the front, so I had a wiffle with really long bangs in the front for a year or two. I went through the awkward growing in phase and wore a lot of pigtails, eventually dying it blue/purple/etc. I still have hair ADD and tend to change it up even 6 months or so!

  5. Oh man, I’ve had tons of hair screw-ups! I’ve been dying my hair since I was thirteen or so, and I’ve been every shade of blonde and red and brassy-coppery-orange (yuck, right?) in between! There was even a horrid perm back in senior year of high school :/

    I remember back when teeny braids with colored rubber bands were the biggest thing, and I of course jumped on the bandwagon. The very front section of my hair in the center of my head got caught in one of the bands, and I had to cut it all out, which left me with a half-inch tuft of hair right smack in the middle of my forehead until it grew out…yikes!

    I actually don’t like scones! I know I know, I should be shot!

  6. Those scones look AH-MA-ZING.

    Oh my gosh, I had some of the worst hair ever. I think my worst offence was in grade 8 or 9 when I was kinda into the punk/goth look, and I dyed my natural red hair black underneath and bright pink on top. It looked terrible and emphasized how white and freckly I was – and only got worse when you added red roots in. Ugh. Took me years to completely grow out, and sometime near the end of high school I got enough sense to realize only one colour suits me and I don’t need dye for it :) Yay redheads.

    I love all the hair photos! hahaha When I was a kid I had the “mushroom cut”- remember that?? hahaha

    You are starting to freak me out. LOL – just kidding, but here are two more things we have/had in common:

    1. Those kitchen cabinets? We had the exact same ones in the house I grew up in.

    2. I used to French braid my wet hair at night to take out some of the curl.

  10. hair would be bleach!!! blonde to the point it broke off and i sported a mullet. but i got extensions put in…for a year. and another 2 for my hair to grow. worst hair years ever!

    love the scones and the early susan pics. 13 yr old dark hair, 70s kitchen, so retro and i dig it!

    I always wanted BLACK hair even though I look like Morticia. I think a little goth or punk rock girl lives inside of me. In junior high I tried sun in and my hair turned orange. Lovely.

  13. Great pictures Susan! I am so jealous of women in your families’ waves and curls, my hair is so straight. I have made some questionable hair style choices as well. I have naturally light golden blonde hair and I chose to dye it dark red in 8th grade and it was not flattering! It was supposed to wash out in 26 washes but lasted 6 months. As it slowly lighted though to a strawberry blonde it was very pretty and I would have liked it to stay that color. I also dyed it a dark brown color and it also wasn’t flattering. I have not been brave with cutting my hair however, always long, from a little past my shoulders to almost waist length which it is now.
    Those scones look baller! I have only had a few different kinds, probably blueberry.

  14. Those scones are nothing like English scones – but they look really good to eat as well as healthy. (Maybe not so healthy if slathered with butter.)
    I really like the idea of crumbling one into a salmon salad, so maybe I will give it a try.

  16. First of all, your first time scones, looked perfect. Good job. Made me want to reach out and grab one. One day I’ll do a post on my favorite, pumpkin spice scone….I hope you’ll be reading because I’ve got nothing short of accolades each time I make them, they are amazing.
    Secondly, you are so cute! I love flashback fridays. This addition was so fun! You make me think that if one day my kids decide to express themselves by changing their hair every color they can try….in the end they’ll be ok. I think your hair looks lovely now, you have a very nice hair style. I’ve never really messed around with my color, and I have long hair because it tames down all my cow licks. I don’t necessarily like it, I’d love to go shorter, but feel it looks dumb on me.
    Tell your mom, I think she’s beautiful.

    • Ha, yes, having rainbow coloured hair is probably the best (ie least permanent) way for a teenager to express themselves ;) Thank goodness my parents never let me get anything pierced.

  17. I am all too familiar with baby bangs circa 2001. Oy.

    My favourite scones are pumpkin! Starbucks has an awesome pumpkin scone, but they are easily enough made at home. This time of year, I love blueberry scones made with fresh blueberries (don’t seem to be as good made with frozen berries).

  18. Ah. My hair… well, I suffer from the terrible “I have curly hair but I want it to be straight so bad that I try too hard” syndrome. I did a keratin straightening treatment on it a few months back and completely FRIED it. It was a disaster! Even before then, I’m always very picky about it when its curly (usually I just straightened it). It had to be JUST right. Now I just live in ponytails, hahah. Works for me; I can’t STAND hair on my neck and face!

    Oh, I love my curly hair, but I had disasters with it. When I was 13, I cut it off pretty much, to look sth like meg ryan, but it ended up like afro hair…kids called me a sheep :(
    Few months ago, again a disaster, because stupid hairdresses cut my hair wrong. I’m growing it now :))

    I’ve never dyed my hair. luckily, I’ve always loved my natural color so I’ll keep it that way til it starts to go gray.

  21. The scones look great! Not sure I’ve ever had one. And…love the flashback! I didn’t dye my hair, but it definitely had it’s issues with cut, frizz, curls, more frizz, growing the bangs out, etc. So cute!

  22. My hair might have never looked that awkward, but I know I had my awkward years. I think my biggest hair mistake was keeping it chin length for so long. It made my face look extremely round! Ick.

  23. Well, that was five minutes of my day amazingly well spent! Thank you for sharing – those are some stunners!! We’ve all had them though:

    When I was 11, I did this short cut with longer bits at the back that had to be curled under every day so that they would “kick” up! I don’t know what I was thinking – I have never been the type to spend time on my hair so I quickly got bored and as such suffered “rat tails” for about a year….terrifying.

    Love the hair pics! I was about to say that I LOVE your high school grad one. Then I reread it and thought it said your best friend DIED the night before. Then reread again. Um, yes. I need some caffeine in my system. But that pic is great.

    I have had some crazy hairstyles- my worst/coolest was when I was 17 and I had it dyed black with bright red streaks a la Marilyn Manson. That in itself isn’t so bad, but it was about 2 weeks before my mom’s wedding to an Orthodox Jewish guy. She was surprisingly cool about it (and the lip, eyebrow and nose piercing that came along with it…). Oh, rebellious years, I miss you.

    favourite scone? I had the most amazing walnut raisins scones when I was in NY. British scones are different from American- I think british ones are what as known as biscuits over there? Trader Joe’s used to sell pumpkin raisin ones which were also good Though kind of dry. They were British style ;)

  26. Favorite scone is either raspberry white chocolate or ginger. I LOVE scones, they may be my favorite baked good.

    I’ve had many, many hair mishaps. I’ve had all colors, purple is my favorite. The perm that made all my hair break off so I had to buy a wig (seriously!), and the braids were probably the worst of my hair issues though.
