The Perfect Protein Bar- One Step Closer

It was close, but crunchy nut butter won out over smooth 9 to 7 ;) These are important global matters people!

I was up early with a growling belly again today. Whyyyyy.

Something quick and speedy – egg, laughing cow, smoked salmon breakfast sandwich.

Ever since destroying my toaster oven I’ve been making my toast under the broiler. It’s a tricky process!

As a side note – I dropped an oven mitt on the oven element today and it caught on fire. Thankfully I was able to grab the mitt and fan it out. But I lost another year off my life from the moment of panic. I’ll be lucky if I make it to 50 :\

What was I making??

Homemade Maple Cinnamon Oat Bran Protein Bars

  • 2 cups oat bran (I like Quaker)
  • 1 cup unflavoured soy protein powder (I use “Purely Bulk”)
  • 1.5 tbsp cinnamon
  • 1 tsp pumpkin pie spice
  • 4 packets stevia
  • 1 tsp maple extract
  • 1/4 cup sugar-free table syrup
  • 4 tbsp almond butter (crunchy!!)
  • 1/4 cup raisins
  • 1/2 to 3/4 cup water

Mix it all up until the powder is dissolved, but mix is still crumbly. Flatten into a 9×9 pan and bake at 350F for 15 minutes.

Makes 8 decent-sized bars.

My third attempt at a baked bar and my best one yet!! The extra cinnamon and maple really added some flavour. The best thing about the baked bars is that they’re stable at room temperature, so they’re much easier transport :)

I didn’t stop there though! Maple Pecan Peanut Butter.

Threw 2 cups roasted peanuts, 2 cups roasted pecans and 2 tbsp pure maple syrup into my food processor.

The processor gave out on me just as it was about to turn into that wonderful creamy consistency. Still pretty freakin’ good though.

Dinner put a dent on my overflowing cupboard!

Cooked up one cup dry bulgur and one cup dry green lentils. Then added some chopped carrots, crumbled tofu, feta, hummus, garlic, parsley, dill and turmeric.

This was definitely one of those meals where I just kept adding things to the pot with no forethought. It was good though! I think I may try to make patties out of the leftovers tomorrow. I didn’t feel like doing that extra step tonight.

Kept me full for a while, but not so much that I went without a bedtime snack ;)

Microwave protein cake made up of 1/2 cup soy protein powder, cinnamon, stevia, 1 tsp baking powder, 1/4 cup applesauce, 2 tbsp egg whites. Microwaved in a mug for 4 minutes.

Topped with some of that Maple Pecan Peanut Butter ;)

While eating this, I was amazed by how large it turned out. That’s when I realized I used half a cup of protein powder when I meant to use a quarter!! Oops. I contemplated putting the other half in the fridge for later, since I usually stick to a regular serving size for snacks. But then I realized I was being silly, and that maybe it would be nice not to wake up hungry tomorrow :)

Food aside, today was my first day of unemployment! Eek! By 8:52am I was already restless and unsure of what to do with myself. I ended up being fairly productive though. Packed up all my clothing, which I’ve downsized to just two laundry hampers. Donated the rest (3 garbage bags worth). Also started throwing out some old junky decorations and things no one will ever need. Felt good to purge it all!

I also hit up the gym with an old co-worker to run through what I plan on doing for my practical exam on Wednesday for my personal training certification. We had to go figure out how to use the weight machines – I’ve never used them at my gym before!! Hopefully I sound like I know what I’m talking about come test day :\

And with that, I leave you today’s Archie picture.

Yesterday it was one running shoe, today he cuddled up with three :)

Question of the Day: Bloggers – do you listen to music when you blog? Watch TV? Do it in silence? I always used to blog with the TV on in the background, but lately I’ve been listening to music and it makes the process a lot more fun. Tonight’s post was brought to you buy the new George Harrison “Let It Roll” cd :)

  1. I can’t do anything that requires active thought with music. I get side-tracked so easily and can’t get anything done! :)

  2. Unemployment…scary thought for me after having a job for the last 20 years straight. I almost always have the TV going so it takes me forever to write my blog post and then catch up on everyone elses!

  3. I’ve started blogging with the tv on. Usually I just watch while I edit pictures and such. Sometimes I find it difficult to concentrate when I’m trying to figure out how to word things, etc. Writing does not come naturally to me!

I love Archie, and I don’t want to see him leave your blog!

Also, the nutritionals on your bars are amazing. I like that there are only 4 grams of sugar.

  4. greensandjeans

I always have something on in the background when I’m blogging! Of course, I don’t do well with total silence. Even when I sleep I always have to have a fan on!

  5. Hey! I recently started reading your blog and I got very excited when you wrote you were moving to Toronto (I am a happy Torontonian and I love to read about what other foodies/bloggers think of this fair city!).

Very neat that you make your own protein bars, and maple pecan peanut butter? Holy delicious!

  6. Cant wait to try out that bar recipe – I haven’t found a recipe that I’ve liked that has also been stable to transport etc! I blog in silence actually!

  7. Just curious, what brand of sugar-free table syrup do you buy/use?

These protein bars sounds great. Will definitely try them!

  8. no i blog when skylar naps so it’s peacefully pin drop quiet!

great job on the bars and the nut butter…nice! i can smell the maple goodness from here!

    enjoy your unemployment :)

  9. Those pictures look awesome. I’m not into protein bars myself, but I use a protein supplement and I am thinking: “Hey, why not make my own protein bars?”

  10. I blog while I have like 10 other tabs open. As I’ve said, I’ve got a problem with multi-tasking, but I’m getting better…I swear! haha

Gosh, love the look of that bar…it looks really dense! I like that!

  11. WOW that bar looks great! I need to get me some protein powder and get on that!!

I either blog with music on or in silence! I like a calming environment, so I can think :)

  12. That bar does look good. I love that it is baked. I swear I am going to use some of my PTO just to get caught up on baking and cooking all the recipes I have bookmarked!

Do you find that protein cake to be rubbery or dry at all? I made one with applesauce and it was just horrible. Maybe it’s me.

I don’t listen to much when I blog because truthfully, I try to work on the post during the day when I take breaks from working. Since I transcribe, I cannot listen to music (obviously), so it’s always silent. Which is really weird seeing as I am a former musician.

    • The protein cake with whey is definitely rubbery and dry – or as I like to call it “squeaky.” The soy powder makes it a lot more dense and almost egg-y. I can’t decide which I like best, but neither have the texture of an actual cake :P

  13. SUSAN – congrats on the first day of unemployment! that is kind of exciting, no? haha. i love the looks of those protein bars, and i LOVE kitchen clearing meals. i often just throw a bunch of things in a pot and cross my fingers it will turn out :)

  14. I usually have a show or movie on in the background, but not always. Kinda depends.

  15. Usually the tv is on. I don’t like peace and quite! lol!

  16. It depends on the type of post I’m writing. If it’s a more serious/insightful kind of post, I need to write it in silence (I could never write papers for school or anything like that with any background noise). BUT if it’s a more relaxed/fun kind of post, then music is great!

Lately since the weather has been getting nicer I’ve been writing with the windows open, so I can hear birds chirping in the background. :)

  17. Go Crunchy!!!

I honestly don’t have a set thing I do when I’m blogging, mainly bc I blog at so many diferent locations I guess.

  18. Those protein bars look fab!
Ahh unemployment. You’re going to do great things, Susan. And I’m sure you’ll dominate that practical exam. So are you planning on looking for a personal training job when you move? (sorry if this has been asked before and you’re getting sick of the ?!)

    • I’m applying for anything in my realm of experience – so gym work, communications work, writing work and barista jobs. I’ll take the first one that bites! I’m scared to to apply for PT jobs though in case I fail my practical (which really, is a legit possibility with my anxiety!)

  19. Ooh new blog layout! I like it. I usually have the TV on in the background when I blog. Then I get busted when Mitch asks me who got kicked off Amazing Race and I’m like….uhh…look at this great picture of vegetables I took :-)

  20. That is some MAJOR productivity! I would have incorporated a lot more lounging and facebooking.

Those protein bars look legit lady! Nice work. Also loving your bulger/tofu extravaganza. Love making big plates of everything!

  21. That dinner looks a.m.a.z.i.n.g. As do the protein bars- hey, maybe you can set up a PT practice selling snacks on the side?!

Sounds like an awesomely productive day- make the most of your unemployment!!!

And good luck tomorrow- assessment, right? I know you’ll do great :D

  22. Your bars look delicious! I think I’m going to have to embark on a similar mission…it’s tricky to find ones that taste good and do what they’re supposed to.

I usually listen to music as I blog, but I don’t really have a set playlist or anything. It depends on my mood!

  23. wow. i just read 5 posts of yours. my face was literally GLUED to my screen, i really enjoyed that! great stuff you’ve been posting. your themed goals are awesome, i look forward to seeing what no dairy (or little) does for you. also, hot toast with butter=amaze. and i think the nut butter with eggs and jam looked/sounded YUM. i am into it. wait a tick! no more cottage cheese SWEET messes! GLORY! i just realized that! hahaha. ok, so anyway, i will be sad when the archie photos go. and you are moving to toronto on my bday! and this comment is so dang random. i really liked your looking back on jobs post. and i really like you!
