Peek-a-Boo! I’m Back!

Hi friends!! Didja miss me? I missed you!! I don’t apologize for taking days off from blogging. Even bloggers need a day off to relax sometimes ;)

Unfortunately, I do not return with many exciting things to report from yesterday. I of course celebrated Waffle Wednesday.

At some point I snacked on an awesome KIND bar – Almond & Coconut flavour.

The coconut in this was top notch, not the cheap-o bulk stuff I usually buy. And it was chock full of whole almonds. Thumbs up!!

Oh, and I made pasta! Boring dish for most, but I never make regular pasta, so it was a treat for me :)

I put the sauce on some spelt penne noodles, brussel sprouts, zucchini and asparagus. Topped with parmesan of course ;) Yum! Now I have a ton of sauce leftover.

 

I was actually going to go to the gym after work yesterday, but I ended up working late and skipped it so I could hang out with the boyfriend I never see instead. So I was up bright dark and early this morning to make up for it. I did an hour of treadmill intervals and it was awesome! I actually prefer running first thing in the morning, less food in my tummy to disagree with me and slow me down. I did my favourite hour-long set:

On a 1% incline:
2 min @ 3.0 mph
3 min @ 3.5 mph
5 min @ 5.6 mph
10 min of 1 min intervals alternating between 6.0 & 6.4 mph
10 min of 1 min intervals alternating between 6.2 & 6.6 mph
10 min of 1 min intervals alternating between 6.4 & 6.8 mph
10 min of 1 min intervals alternating between 6.6 & 7.0 mph
5 min @ 6.0 mph
3 min @ 3.5 mph
2 min @ 3.0 mph

Good times. My heart rate didn’t go below 170 bpm for the last 20 minutes, which is pretty rare for me! Means I was pushing myself, and am getting better at maintaining those high heart rates for longer periods :)

I had to be at work early today, so I made breakfast and iced coffee last night.

Peanut M&M cookie :)

  • 1/2 cup rolled oats
  • 2/3 scoop chocolate whey protein powder
  • 1 tbsp peanut butter
  • M&Ms
  • splash almond milk

I scraped the cookie off the plate, flipped it over, and stuck it in the freezer while I showered. Gets rid of the gooeyness that sometimes happens on the bottom.

Work was work, lots of running around in the rain today. I did however get to run home for a quick lunch in between assignments. Since I was driving the work car, I didn’t think to grab my house/car keys on the way out – and I locked them in my apartment!!! Ugggghhh. I am such a scatterbrain. Seriously, my life is a mess sometimes. I called Chris in a panic, and he was able to pick me up from work and expertly break into my apartment (I don’t know whether to be happy or concerned it’s so easy to break into…). So crisis kinda averted. With the whole speeding thing, and now this, I think I lost 2 years of my life in stress this week.

Thankfully, I got to lay a load off at the pub tonight :)

My newsroom coworkers had a little going away get together for me tonight :) I’ve said it many times and I’ll say it again – the job itself may not be for me, but I worked with some amazing people. Not just nice and fun, but really talented and good at what they do. 

As for the food, I drank this beer, snacked on a few nachos and ate part of a big Greek salad. It actually wasn’t that much food volume-wise, but I was stuffed!!

Oh, and look at what they gave me as a going away gift!!

A $60 gift certificate to a sporting goods store. How appropriate is that? They all know I’m doing my personal training certification now (and that I often mosey into the office in the morning having run “x” amount of miles already). I’m hoping to spend the money on some desperately-needed long running pants :)

Well friends, that is all from me tonight. I’ve got to be at work early again tomorrow, and want to fit a weight lifting sesh in beforehand. I must get in the kitchen an prepare a bazillion meals for tomorrow :P

Question of the Day: What’s your favourite part about your job? At the radio station, it was definitely the peeps! Not just the newsroom folks either, the whole office was full of good-hearted people. Starbucks is the sweet discount, duh :P

To the Stars on the Wings of a Pig

Hey friends! So I’ve finally got some news on the work front. I’m just gonna tell you right now because I’m a blabber mouth who sucks at telling secrets, and I’ve already been tweeting about it all day ;)

So first off, I got hired at Starbucks! Yayyyy! I’m going to be working as a full-time supervisor for the next few months, and start training this week. I’m happy there will be no void in my paychecks, and the Starbies job should actually pay just as much as the reporter gig :)

I’m not going to just be working at Starbucks though. You all know I realized a long time ago that I do not want to be a daily reporter, and I don’t want to be a PR person unless I find the perfect company. These are the only things my skills and background would allow me to do.

But why just do what my background allows? Especially if it would just make me miserable? (again) So I’ve decided to instead follow my heart, my gut and my passions. I’m throwing all sense and rationality to the wind and working toward a personal training specialist certification with CanFit Pro (Canada’s national standard).

I know, right? Me? A personal trainer? Why not!? Exercise and fitness isn’t just a phase or a hobby, it’s my life. What draws me to jobs like reporting and Starbucks are the people. I love meeting fabulous people, and even more I want to help the ones that are looking for it. My mom told me this wonderful thing along the lines of “the day you discover your passions is when you’ll never work another day in your life.”

Of course, I expect to work :P And I expect it to be hard at times. I don’t also plan on plugging away with people at the gym all day. I plan to continue my education with a future certification as a Nutrition & Wellness Consultant. Perhaps I’ll even want to be a class instructor – who knows! Basically, I see this as the first step in many steps to come. For the first time in a long time, I feel like I’m taking a step forward, and not just another step back.

I also plan to keep the journalism thing up. My new experience and titles will allow me to delve further into health and wellness writing. I’m lucky to have made a lot of contacts in journalism school, and I have a long list of Canadian publications I hope to freelance for.

I’m so excited!!!

I toasted my favourite deep chocolate flavour last night and put some marshmallow fluff on top. ohmysweetlord. It got crunchy on the outside, but soft and melty on the inside, then the fluff was all frosting-like on the top. Every single bite was worth every penny spent :D

Breakfast this morning was not very photogenic, which usually equals deliciousness.

Two Nature’s Path flax waffles smothered in 1/2 cup cottage cheese, 1 tbsp almond butter, 2 tbsp faux-syrup (mixed with a hand blender). And sprinkled with cinnamon of course. SO good! Freezer waffles are only filling when you throw protein + fat into the mix.

Then it was off to BodyStep, ie the funnest class ever (sorry spin, you hurt too much to be fun :P ). Step class is definitely not one of those workouts you can just phone in. You definitely get out of it what you put in, more so than some of the other classes. I think that’s why I always come out feeling so satisfied and accomplished :)

Afterward, I came home and drank some chocolate Amazing Meal blended with almond milk, half a banana, yogurt and ice.

I was a sweaty mess. But I had to look decent for my job interview this afternoon. Enter lots of showering, hair straightening, caking on make-up, ironing clothes (ugh) and digging out accessories and voila!

Hi!! I’m actually modelling my new necklace and earrings. For years I wore nothing but giant flashy earrings, but I’ve been on a chunky necklace kick lately. And I’m a sucker for girly flowers :P

And apparently the gussying up worked!

Oh, and there was a lunch, carefully eaten as not to spill anything on myself.

Smoked salmon on a bagel with laughing cow cheese, capers and spinach and an orange on the side. This salmon is local bbq flavoured stuff. SO good!! We Maritimers know how to do our smoked salmon ;)

After all my running around, I came home and tried out my other KIND bar. This time in Walnut & Date.

I had high hopes for this bar after Kath raved about it on her blog recently. Plus, dates are one of my favourite foods and I love them in just about anything. But, I wasn’t a huge fan! Maybe my expectations were just too high. I loved the walnuts, their texture reminded me a lot of sugar cookies. But I couldn’t really taste the dates. Honey is the third ingredient, and it was definitely the overpowering flavour in this bar.

Supper was (what else) chicken salad pita made with my leftover roast chicken from yesterday.

Finally, you may be wondering what “To the stars on the wings of a pig” means. Technically, it’s “Ad astra per alia porci.” It was the motto and personal stamp of John Steinbeck and appeared on the insert of all his books. It was a jab at an old teacher who once told him he’d only be a successful writer when “pigs flew.” I studied Latin and have a soft spot for Latin phrases. I’ve adopted it as my personal motto, to remind me that anything is possible :)

Mmmm…I got to enjoy every little bite of my s’muffernutter breakfast cookie this morning.

Deb and I were discussing the importance of the protein powder in the breakfast cookie today. It really does act as the “binding agent.” The thick goo it creates when mixed with your liquid is what hardens the cookie in the fridge overnight, not the nut butter. But for all you other bloggers out there who don’t use protein powder, do your cookies still work without it? Wouldn’t it be a mushy mess you have to eat with a fork?

I don’t usually bring bars as snacks when I know I’ll just be at the office, but I’m too excited to try out my new bar finds! Today’s pick was the KIND Fruit & Nut in yoghurt coating.

I didn’t know KIND had a special “nut blend,” or ”fruit blend” for that matter. I must remember to never sell a bar with the same combo :P

A little low on the protein, but it is just nuts and dried fruit. Usually I like to pair high-carb bars with a piece of cheese to even things out, but this is a little too high-calorie for that.

The yoghurt coating was actually too thick for my liking. I didn’t realize it was coated on the bottom too. Otherwise it was a verrrry yummy bar. The nuts were toasted to perfection. The brazil nuts in particular were delicious!

Oh, and as for the PB&J Larabar, Ellie and I are looking into why the Canadian and UK versions have added refined sunflower oil. But she did inform me they don’t count calories from fibre in the U.S, and that’s why the calories were listed as higher. I didn’t know that!! No wonder my “Fibre 1” cereal has twice the number of calories as the American “Fiber One” version.

Lunch was more Yves cajun chicken slices with swiss and veggies.

Well congrats to you if you read through all of that! Abridged version is that it had medium & high intensity interval cardio with upper body and abs. This was by no means a short workout, took me almost an hour and 20 minutes. But I was having fun, it’s how I like to spend my Sunday afternoons :)

I was definitely running on empty by the time I came home though, so I immediately replenished with a smoothie.

  • 1 cup unsweetened vanilla almond milk
  • 1/4 cup cottage cheese
  • 1 scoop ISO Lean peach-mango whey protein powder
  • 1 cup frozen strawberries

Then I got started on dinner! A roast dinner. I threw another bird in the oven. Dang, this is so easy! No pictures of the carcass, but I just rinsed off the small chicken, stuffed it with a head of garlic, lemon quarters and a small bunch of thyme. Rubbed some salt and pepper on it then cooked in a 425F oven for 90 minutes. So frickin easy.

I actually kept the chicken in for five minutes longer tonight, but I don’t think I needed to. It was crazy delicious. I can’t believe it took me this long to get the nerve to roast chickens.

On the side are sweet potato and carrots tossed in balsamic vinegar and maple syrup and roasted in a separate pan. Then some frozen brussel sprouts in a little pepper and Earth Balance.

How’s that for a Sunday dinner? One of the few times I wish didn’t live alone are occasions when I have a wonderful meal I want to share. At least I get the leftovers all to myself ;)

 

November Goal Check-In

Three weeks in! Already got ideas swimming in my head for next month ;)

Have fun workouts.
First, I only made it to one yoga class and didn’t do any at home. Fail on that front!

Monday – I got my BodyStep on and stepped my little heart out. It was spectacular.

Tuesday – Surprisingly quick 5k run outdoors because it was too beautiful to stay inside, then an evening BodyFlow class to streeetch it all out.

Wednesday – Spin class with Chris. SO much fun!

Thursday -  Missed BodyPump but came up with a lifting sesh of my own.

Friday – Impromptu lifting sesh left me waddling. Day off.

Saturday – Another day off. Needed to fully recharge.

Sunday – Amaaaazing and energetic weight and HIIT workout at the gym.

Be less complacent with food.
My experiment with temporarily tracking calories again was a success. Even though I’m no longer doing it, I find it got me in that mind set of just being aware again. As a side note, I’m also doing much better at not counting in my head. I haven’t a clue what any of my meals were today, and I don’t care! :P

Get more sleep.
Well almost sleeping through work yesterday helped! :P To be honest, going from crazy early morning shifts to evening shifts really messed with my body clock this week. I was going to bed too late, but waking up too early. Perhaps I should re-introduce the afternoon nap…

Make it through the last month of work with a positive attitude.
Not gonna lie, it’s getting worse by the day. But I do find myself appreciating my co-workers more. The job itself may not have been for me, but I worked with really good people.

Try my best to not let anything hold me back.
I’ve finally buckled down and decided to follow what I’m truly passionate about. For the first time in my life, I feel really excited and confident about my future.

Figure out a way to get into the holiday season.
I bought my first Christmas present today! You’re going to love/hate it mom ;)

Spend more time with my grandparents.
I haven’t spoken to any of them this week :(

Be more honest with people.
Ohman, I was the most honest I’ve been in a long time this week. I’ve always known it’s important to be honest with the people you love, but this week just reiterated how important it is. Sometimes you hurt people more by not telling the truth than if you were just honest.

Look for a job.
Got a job interview at Starbucks tomorrow ;)

Start playing music again.
Eff.
