Helloooo! As with most Sundays, I have a ton of food photos to share! And I’ve got a ton more food to prepare for my day tomorrow – so let’s get to it, shall we?
Woke up this morning and made my mom and I a waffle feast.
- 3/4 cup rolled oats
- 1/2 cup cottage cheese
- 1/4 cup plain yogurt
- 3/4 cup egg whites
- 3 tbsp ground flax
- 1 tsp vanilla extract
- 1/2 tsp baking powder
I spent the morning lazing around. Sundays are meant to be lazy! By the time I’d gathered the energy to go to the gym, it was time for another snack.
Almond butter + banana. Basically the same thing I eat everyday before I go to the gym. Never fails.
Then it was off to the gym for treadmill, upper body and abs.

I wore my new running shoes today and they were awesome :) Amazing how much the cushioning wears down in just six months, I could notice a huge difference!
I went straight to the grocery store after the gym, so I picked up a Bolthouse Farms vanilla chai tea and drank it right in the store as I shopped. I was ravenous!
It was way sweeter than I was expecting! Not bad for 20g protein, but awful at 42g sugar in 450 mL. Blech.
Came home and had some real food, including a new (to me) food!
Armstrong garden herbs cheddar cheese.
I guess I can’t really call this a “cheesestring” as it’s not stringy. Cheese stick perhaps? Regardless, it was creamy, full-fat, treat :)
Then it was on to my weekly food prep!
It’s a lower-cal, higher protein version of regular granola. Subbing out puffed rice for some of the oatmeal. I followed the directions almost exactly and it turned out amazing. Seriously. Cooking down the maple syrup first, and then stirring in protein powder, gave it such an awesome flavour!! Once you’re done making coconut chia granola, go make this :)
In between stirring the granola, I got to work on Averie’s Vegan White Chocolate Chocolate-Peanut Butter Cups.
Except I used totally non vegan ingredients ;) As with most of Averies’ recipes, this one is super simple. Just stir up some peanut butter, cocoa powder, vanilla extract and agave nectar for the filling. Pour a little white chocolate into the cup, plop in your filling, then top it off!! Keep reading to hear the results of these bad boys.
Theeeen it was some Olive & Feta Hummus a la me ;)
- 1 can chickpeas
- 3.5 oz feta cheese
- 1/2 cup sliced black olives
- 2 small cloves garlic
- salt and pepper
All blended up in my food processor. This turned out great. I can’t wait to make tomorrow’s turkey sandwich with it.
Oh yes, and while all this was going on, I also roasted a chicken.
With some roasted brussels sprouts and parsnips. One of my fave dinners!
And the best part – dessert!
Ohheckyes, it was good. I was scared I didn’t sweeten the filling enough, but the white chocolate is so sweet it goes perfectly. The rest of these will be pawned off on my coworkers tomorrow, muhaha ;)
Okee doke, I hate to blog and run, but I have to go get ready if I intend to get up for spin class tomorrow! Have a great start to your week!!

Hm. Or, I’m just a big dork.
I rolled out of bed for the 6am spin class today. Surprisingly, I had tons of energy! Must’ve slept decently. Lately I’ve been dragging a little, but today I felt like I just couldn’t push hard enough! It helped my favourite instructor was back after a long hiatus. Funny how a good instructor can make all the difference in an exercise class!
I prepared a pot of steel-cut oats last night so I wouldn’t have to waste any time this morning making a yummy breakfast. Just had to pop it in the microwave!
One serving steel-cut oats cooked with vanilla protein powder, cinnamon and topped with dates and almond butter.
Then I rushed out the door to Day 1 of my First Aid course. I’m doing two 8 hour days of first aid training that’s required for my personal trainer certification. My class is uh, interesting. I’m usually the type of person who is nice or at least polite to anyone, regardless of how they come off. But wow, my class consists of some crazy characters! Two people actually got into an argument while going through how to use a defibrillator. It was intense.
Regardless, I’m finding it really useful. The way I see it, there’s a good chance someone will go down while I’m working in a gym. So I’m taking it seriously. Thankfully, our teacher is fully sane and a very experienced paramedic and nurse. Lots of good info!
The best part was that I got to come home for lunch. Not having to pack a lunch feels like such a luxury!
However, I did boil two eggs last night in preparation for my lunch, so I turned them into an egg salad with mayo, pepper, onion and green pepper, then put in on toast. And the mandatory side of orange ;)
And what’s lunch without dessert!?
My advent calendar chocolate and some dark chocolate M&Ms. A little goes a long way. As in, that way you can have a little after every meal ;)
After I got out of class, I fiiiinally hit up the grocery store. I didn’t do too bad considering there were some cleaning and beauty products on the bill as well. Except, I was planning on making butternut squash soup as my “big dish” this week, and there was only one near-rotten b-nut squash left. Boo :(
To make room for the new food, I finished up the remainder of last week’s “big dish”.
Soooo, this is shaping up to be another crazy busy week for me. Ahh! How did that happen? I don’t have a day off till Saturday, which will be 16 days from my last day off. I’m not complaining, I know some people have it just as bad, if not worse. I was just hoping this would be a period of “catch up” for me, and it’s turning into the exact opposite. I’m falling even more behind!! My apartment is thisclose to being taped off as a hazardous zone :P Oh well. I can always hope for next week… Right…?

1) What are your favourite ways to change up leftovers? I like to put them on a bed of greens, in a pita, stuff veggies with them, add cooked grains, or even just add different spices or salsa!
2) When you’re low on spare time, what things take priority? Even though I’ve been crazy busy lately, the two things I refuse to ditch are my workouts and food preparation. I feel so much better when I’ve worked out and have good food in my belly. Unfortunately, that has also led to a piles of both dirty clothes and dishes :\

So I left you off at breakfast yesterday. I was feeling kind of icky after my two whole drinks that got me almost drunk. There’s a reason why they call it a cheap drunk – I spend less money on booze! :P
I had something to soak up the liquor.
Two pieces of fresh baked whole wheat toast, soft-cooked eggs, mini plums. I’ve been buying diet bread for too long, this bakery stuff was glorious. I was raving about it all day yesterday!
Chris actually came up with the idea for his breakfast, I was quite impressed by his creativity!
Bruschetta omelette with onion and cheddar cheese. Doesn’t that sound awesome? It’s a three-egg omelette smothered in cheese and buttered toast. I called this his “man breakfast.” But something was missing…
Thaaat’s better. A breakfast beer :P
Then it was off to my Nana’s for more visiting. We came home for a pre-bike ride lunch.
I picked up one of those roasted chickens from the grocery store, and mixed the white meat with hummus and onions. Then topped it with sliced tomato, spinach and sprouts on more of that glorious bread. It was delicious. Another instance of where mayo is not needed!
It took us a while, but Chris and I mapped out a 44km (27 mile) loop for our bike ride. Chris wanted to just hit the road and see where it took us, but I needed a plan! It was a really great ride. Awesome rolling and steep hills, which I have a hard time finding in Fredericton. I really liked biking with Chris too. He’s much faster than I, so I liked the challenge of trying to keep up with him. I pushed a little harder than I would have had I been by myself. In all, it took us 1 hour and 49 minutes.
We quickly showered when we got home and got ready for dinner. We decided on another one of my favourite Moncton restaurants, Cafe Archbald. (yes, it’s spelled incorrectly). This restaurant is known for two things crepes and thin crust pizza. So that’s what we got!
I was feeling really dizzy and nauseated from the ride, a familiar feeling I now know is from a loss of electrolytes. So I opted for one of the saltier menu items, smoked salmon crepe. “Smoked salmon, asparagus, green onion, capers, mozzarella and dijonnaise sauce.”
I asked for it light on the dijonnaise.
So good! They really did go light on the dijonnaise, I could taste it only faintly. The salmon was quality, and the crepe itself was obviously delicious. I immediately felt better once I finished it too. The salty smoked salmon did the trick!
Chris got the All American pizza with Caesar salad.
I’m pretty sure the pizza was just green pepper, mushroom, green onion and pepperoni. He said it was good :)
Afterwards though, our tummies still had some room. And how do you go to a crepe place and not get a dessert crepe?
We went back and forth a lot on what kind to get. Chris didn’t really want anything fruity, and we both wanted chocolate. So we opted to split a brownies crepe. “Brownies, chocolate, caramel, nuts and ice cream.”
Oh. My. Gosh.
I’ll put it this way. Afterwards, I told Chris this crepe was my favourite part of our vacay. It was stuffed with warm, gooey brownies. The caramel sauce was perfection, I even thought the ice cream was delicious!
Happy bellies again :)
We had a pretty low-key night last night. My mom came home from the cottage, so we hung out with her and hit the hay early. I actually just got in from a morning 5k run, but I’ll save that all for my next post ;) Chris and I are spending the day shopping then heading back home after supper tonight.
