The Last Lunch

My mother texted me today to tell me she will be back from Florida on Sunday and that she misses me.

I sent a message back, saying I missed her too, but she’s not getting her dog back.

Actually, after tomorrow I start the process of getting rid of my belongings and bringing what’s left to my mom’s place about 90 minutes from here. I’d like to spend as much of May there as possible before I move to Toronto June 1st. So she’s lucky. She’ll get her dog back after all ;)

Cream of wheat + egg whites + maple syrup + raisins + cinnamon + cashew butter. Getting through the many jars of nut butter in my fridge. I may be eating cream of wheat for a while though!!

Even though tomorrow is my last day at work, we all went out for a celebratory lunch today because my boss is out of town tomorrow.

My boss gave me full reign over the location. He told me this two weeks ago, and it took me two weeks to decide. This was serious business people!! I wanted to choose a spot that was relatively healthy, inexpensive (since he was paying) but had regular food everyone would enjoy.

Then I realized the one thing everyone loves is breakfast. Who doesn’t love breakfast at any time of day? So the group of us went to a local-ish place called Chez Cora that specializes in brunch-like fare.

Recycled photos. There is a time and place to take pictures of your food. This was neither.

But this is my favourite dish there, so I already have photos on hand! Piece of toast with a perfectly poached egg (someday I will do that!). And cottage cheese dumped on top of the fruit (minus the kiwi today, since I am now off it).

Afterwards, my boss took us to a place called Johnnie Java. A counter and espresso machine tucked in the back of a specialized import store. They roast their own beans there and supposedly have the best coffee in town. I got an espresso macchiato, and it was pretty darn good! Went down smoooooth. They also sell green beans there, so it’s my goal to try roasting my own (using Lori’s popcorn method) before I get rid of my popcorn maker. So, like, this weekend :)

The rest of my afternoon was spent sobbing over leaving my job.

Lunch was light, and even with my afternoon snack I was still starving for dinner! Threw together what is quickly becoming a staple around here.

There are many reasons why I keep resorting to these. Besides being super quick and healthy, it’s also HUGE and takes a while to devour eat.

Highlights included pickled beets, chicken, cottage cheese, feta and olives. Only dressing was fresh lemon juice. Amazing.

And…um…in case you’re wondering, I am still eating protein powder batter every night.

1 1/2 scoops chocolate protein powder, 1 tbsp cocoa powder, water. With sprinkles and chocolate chips. Tastes like chocolate icing. It makes me happy.

My eats are going to be repetitive, boring and random over the next little bit. Instead of apologizing, I’ll instead reassure you that they will get exciting again soon. I already have a dessert list of things to feed my step-siblings in Moncton, then a list of fun things to make in Toronto. One of my new roomies (hi Megan!) is a fellow foodie, so I suspect we’ll be having tons of fun in the kitchen :)

And with that, I’m going to wrap up this post with a little April Goals wrap-up.

Continue the spirit of the sleep challenge, aiming to get 7-8 hours of sleep a night. I got around 7-7.5 every night, which is all I can ask for. My body functions best on 7.5 now. Anything over that is just a distant memory…

Get rid of as many of my belongings as possible. Totally didn’t do this. But this is what I’m dedicating all next week to.

Get my bike on the road. Pffft!! It was SO cold ALL month. Any other Maritimers out there agree that we had sucky weather this month? Cold, cloudy or rainy most of the time :(

Pass my personal training exam. Check!! I passed my written exam :) My practical is next Wednesday. Eep!

Chill the eff out. No stress here. Now that I’m funemployed, I have nothing but time to focus on all my obligations. We will just ignore the fact that I no longer have a steady paycheck coming in….mmmkay?

Question of the Day: What is your favourite restaurant and what’s your favourite dish to get there? My favourite restaurant is Calactus, a vegetarian/vegan restaurant in Moncton, featured here, here, here, and here. But my favourite dish there is the Big Marc Burger, blogged about here. Hands down, the best veggie burger ever!!

Waffle Wednesday has officially become my third favourite day of the week (behind Saturday and Sunday, of course). Wednesdays are now my regular full-on rest day from the gym. Which means sleeping in late(er), making breakfast in my peejays, and drinking a whole (giant) mug of coffee while perusing the internet.

Until I realize I have 20 minutes to shower and primp, and rush off late for work :P Today was just one massive waffle instead of my two regular big ones ;)

  • 1/3 cup rolled oats
  • 1/3 cup cottage cheese
  • 1/3 cup egg whites
  • 1 tbsp ground flax
  • 1/4 tsp baking powder
  • dash vanilla extract
  • 1 package stevia

All blended up and made in the belgian waffle maker, then topped with peanut butter, blueberry jam and maple syrup. Puuurrrfect way to get over that mid-week hump!

Work’s been pretty good this week. Things have slowed down a bit so it feels like I have time to catch my breath between assignments. I actually love being busy at work, but I also need that down time of easy stuff in-between.

Leftovers from supper yesterday – Olive & Feta hummus stuffed chicken breast, roasted pepper quash, parsnip and turnip. Dude. I don’t know why it has taken me so long to realize that making extra food at suppertime makes for suuuuuper easy lunch preparation the next day. I guess it’s because I have access to a microwave at work for the first time. This meal would not have been as yummy cold.

GREEK YOGURT!!!! In my fridge. Better yet, in my belly.

Not sure if everyone knows, but I’ve never tried Greek yogurt before. Up until now, there hasn’t been a brand that made it available where I live in New Brunswick. Thank you Liberte.

Now, I know making Greek yogurt is easy peasy, but I could never figure out if the stats on the homemade stuff would be the same. Anyone got any insight on this?

Toasted Berry Crisp cereal. The stats are just like many of the other Kashi cereals… decent on the protein, good on the fibre.

So what did I think?? Well, first off, I wasn’t that impressed by the cereal. It was too fake tasting with the weird chewy berry bits. And some parts got soft real quick in the yogurt. As for the yogurt – um, Greek yogurt is just thick yogurt. Actually, I didn’t really notice much of a taste or texture difference between the regular Liberte stuff (which is really thick to begin with anyways). I suppose it does taste like sour cream plain. And you can’t beat the protein content. But it’s also five bucks a pop, and I don’t rely on yogurt for protein. So it’s nice as a treat!

All these hot lunches had me craving a cold supper! It’s been almost a week since I had a pita! That had to be remedied at once.

Can you see the mackerel poking out from behind the spinach?? Wikipedia tells me that Atlantic mackerel is extremely high in vitamin B12 and has almost twice the Omega 3 of salmon. Suh-weet!!

This evening I “attended” a webinar on the Can-Fit-Pro conference being held in Moncton next month. Still debating whether or not to go. The timing and price aren’t that great, but it will be a great learning opportunity for me as a future personal trainer, and maybe I could make some contacts?

While webinar-ing, I snacked on a carrot protein cake.

  • 1 scoop (30g) vanilla whey protein powder
  • 1/2 tsp baking powder
  • dash cinnamon, nutmeg, ginger
  • 2 tbsp carrot puree (ahem, baby food)
  • 2 tbsp egg whites

All mixed up in a mug then popped in the microwave for 90 seconds. Turns into a HUGE cake. I topped mine with a peanut butter/almond milk mix to make the nut butter go farther ;) Yumyum!

 

So I contemplated doing the anonymous questionnaire on formspring that many bloggers have been doing lately. But I’m one of those losers who doesn’t appreciate anonymity on the internet. Maybe it’s the journalist in me. Aaaanyways, I would really like to do another round of Q&A, it’s been a while since the last time and I lot has changed in my life since then! Meet me in my office

Happy Tuesday all! I apologize if I’m a little “off” this week. Trying to get settled into the new job,and spending my spare time “catching” up on some things. Also, I’m frantically trying to get through my personal training textbook before my classes in Moncton next week (okay, how exciting will those be!? Can’t wait to share it with you!)

Anyways, tangents aside, I did indeed get up at 5am today to hit the gym before work. I swear it’s not that hard to do. Maybe it’s because I’m not very good at falling back asleep. Once I’m awake, I’m usually anxious to get my day started!

My first week of scheduled workouts is already all wonky from taking the day off yesterday. I’ll still get them in, just on different days. So that means I went for 40 minutes running, shoulders, and abs today.

First, the treadmill. I don’t feel like typing it out, but I started with 5 minutes walking. Then I did the following sequence:

5.6 mph, 5.7 mph, 5.8 mph
5.7 mph, 5.8 mph, 5.9 mph
5.8 mph, 5.9 mph, 6.0 mph

…until I got to 7.0 mph, which took 40 minutes :)

Weights/abs were alternated again:

Dumbbell shoulder press: 3 sets, 15 lbs ea x 10
Cable horizontal woodchop: 3 sets, 35 lbs x 10

Barbell upright row: 3 sets, 20 lbs x 15
Hanging leg raises: 3 sets, bw x 8

YTWL: 3 sets, 7.5 lbs ea x 4 each letter
Swiss ball crunch: 3 sets, 11 lbs x 15

I tore through the last part, finishing in 65 minutes. I wanted time to go back home to shower and make a nice breakfast :)

Custard oats topped with cashew butter and molasses. I am obsessed with custard oats. My protein powder oatmeal just isn’t the same anymore in comparison. Oatmeal lovers – I encourage you to give it a try! The creamy texture is out. of. this. world. All I do is whisk in an egg with the oats and water before I bring it to a boil. Then I reduce it to med-low and simmer for 15 min to make sure it’s all cooked in.

Today was Day Two at my new communications job at the university. Wanna see my office??

I’m the desk on the right, office-mate is on the left. Office-mate is a sweetheart, and a very similar worker as me. Both of us are pretty quiet, but like to stretch and take chit chat breaks occasionally. I’m not a huge fan of people who blab my ear off while I’m trying to get work done.

The boxes you see are full of university apparel. Apparently we’re also a “sweatshirt shop.”

I got my radio set up today, and plan on replacing that Tim Horton’s cup with a nicer pen holder. I also want to get a mint dish/candy bowl, and maybe some filing trays for my papers.

Classes don’t start until next Monday, so it’s eerily quiet in the building. I’m on a floor with classrooms, so it should get lively shortly! It is so SO weird being back at my university as a staff member and not a student. SO weird!!! I totally flipped when I got my parking pass today…

It’s definitely neat learning all the “behind the scenes” stuff of my university. Even more, having a hand in what goes on there. I feel like such a proud alumna :D

Got all my assignments done for the day just in time to come home starving and impatient for a meal.

I didn’t even feel like cooking a chicken breast, so I threw a can of tuna in with some Indian Cauliflower Stew. Tuna was definitely not the right meat for these flavours. But whatever, it was hot, edible and healthy.

 

I’m already exhausted, don’t think I’ll make it through the Biggest Loser tonight! Got a 6am spin class on the sked for the morning. See ya tomorrow!

 

Question of the Day: What is one personal item you must have in your office/workplace? Anything you think my desk could use? I need to have hand cream and chapstick within an arm’s reach at all times! At Starbucks I kept them in my apron pockets ;)
