Tofu Spread

  • 1 block extra-firm tofu
  • 2 laughing cow cheese wedges
  • 1/2 a carrot, chopped
  • green onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1/2 tbsp lemon juice
  • 1/2 tsp ground cumin
  • salt and pepper to taste

Heat the tofu in the microwave for about three minutes to cook, then let chill in the fridge. Tofu can be eaten raw, but gives a lot of people digestion issues (including me!). Once cooled, blend the tofu, cream cheese, lemon juice and spices. Then pulse in the chopped veggies. It’s pictured on pita bread here, but this stuff actually tastes best on rolls and bagels!
